Today’s Recipe: Savory Autumn Vegetable Galette

SAVORY AUTUMN VEGETABLE GALETTE
PREP TIME: 45 MINUTES
COOK TIME: 50-55 MINUTES
MAKES: 6 SERVINGS

Filling
1    sweet potato, peeled and diced
1    small beet, peeled and sliced
1    parsnip, peeled, halved, and sliced
1    onion, cut into 1½” pieces
3    small carrots, peeled and sliced
12  Brussels sprouts, halved
½   t salt
1    T pumpkin seed oil
4    garlic cloves, peeled and minced
2    sprigs thyme, minced
2    cups kale, minced
4    ozs cream cheese, softened

Dough
1½ cups MaryJane’s Budget Mix
8   T butter, cold
1/3 cup cold water
1    egg, separated

1. Preheat oven to 400°F. Add sweet potato, beet, parsnip, onion, carrots, and Brussels sprouts to a medium bowl. Add salt and pumpkin seed oil; toss to combine. Pour into a 9″ x 13″ baking dish, cover with foil and bake for 35 minutes.
2. In a small bowl, combine cream cheese, garlic, thyme, and kale. Set aside.
3. Add Budget Mix to a medium bowl and cut in butter using a pastry blender. Whisk water and the egg yolk together, and add to the Budget Mix mixture. Stir just until dough forms.
4. Lightly dust a clean surface with flour and roll the dough into a circle that is roughly 18” in diameter.
5. Transfer the dough to a cookie sheet lined with parchment paper. Spread cream cheese mixture into the center of dough, leaving about 3” of space from the edge.
6. Add vegetables to the center of the circle and fold the edges of the circle toward the center, overlapping the dough with each fold.
7. Using a whisk or fork, beat the egg white until frothy, and brush onto the crust.
8. Bake for 25-30 minutes until crust is golden brown.

Gather ingredients and preheat oven to 400°F.

 

In a medium bowl, combine 1 peeled and diced sweet potato, 1 small peeled and sliced beet, 1 peeled and halved parsnip, 1 onion, cut into 1 ½” pieces, and 12 halved Brussels sprouts.

Add ½ t salt.

Add 1 T pumpkin seed oil.

Toss to combine.

Pour into a 9”x13” baking dish and bake for 25 minutes.


Add 1½ cups MaryJane’s Budget Mix to a medium bowl and 8 T of cold sliced butter to the bowl.


Cut in butter using a pastry blender.

Add 1 egg yolk (reserve the white) to 1/3 cup of water. Whisk water and egg yolk together.

Pour into the Budget Mix mixture. Stir just until dough forms.

Lightly dust a clean surface with flour and roll the dough into a circle that is roughly 18” in diameter.

Mince 4 peeled garlic cloves, 2 sprigs of thyme, and 2 cups of kale, and add to a small bowl. Add 4 ozs of softened cream cheese, and stir to combine. Set aside.

Transfer the dough to a cookie sheet lined with parchment paper.


Spread cream cheese mixture into the center of dough, leaving about 3” of space from the edge.


Add vegetables to the center of the circle.


Fold the edges of the circle toward the center, overlapping the dough with each fold.


Using a whisk or fork, beat the egg white until frothy, then brush egg white onto the crust.

Bake for 25-30 minutes until crust is golden brown.
