Today’s Recipe: Gluten-free Peanut Butter Skillet Brownies

GLUTEN-FREE PEANUT BUTTER SKILLET BROWNIES
PREP TIME: 15 MINUTES
COOK TIME: 20-25 MINUTES
MAKES: 8 SERVINGS

1    cup oat flour
½   cup coconut flour
¼   cup ground almonds
¼   cup cocoa powder
½   cup sugar
¼   t salt
½   t baking powder
½   cup butter
2    cups chocolate chips
3    eggs, beaten
¼   cup peanut butter
1    T powdered sugar

1. Preheat oven to 375°F. In a medium bowl, combine oat flour, coconut flour, ground almonds, cocoa powder, sugar, salt, and baking powder.
2. In a small saucepan, melt butter and chocolate chips together over low heat. Make a well in the center of the flour mixture and add chocolate mixture and beaten eggs. Stir until all ingredients are combined.
3. Pour batter into an 8” cast iron skillet.
4. In a small bowl, combine peanut butter and powdered sugar. Spoon the peanut butter mixture into a pastry bag with a large round tip and make several rings of peanut butter over the brownie batter. With the tip of a knife, make four lines in the peanut butter, starting from the outer edge and moving toward the center. Make four more lines in between the first four, this time starting in the center and moving toward the edge.
5. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Cool for at least 1 hour.

Gather ingredients. Preheat oven to 375°F.

Add ½ cup of butter to a small saucepan. Add 2 cups of chocolate chips and melt butter and chocolate together over low heat.

Add 3 beaten eggs.
