Today’s Recipe: Whole Grain Bagels with Avocado Cream Cheese

WHOLE GRAIN BAGELS WITH AVOCADO CREAM CHEESE

PREP TIME: 20-25 MINUTES, PLUS 1½ HOURS RISING
COOK TIME: 33-35 MINUTES
MAKES: 12 BAGELS

Bagels
1 1/2 cups warm water
2    t honey
1    package active dry yeast
1    cup whole wheat flour
2    cups white flour, plus more for dusting
1/3 cup quinoa, rinsed
1    t salt

Topping
1    egg white
1    t water
3    T wheat germ

Avocado Cream Cheese Spread
4    ozs cream cheese
1    avocado
1    T lemon juice
1/4 t salt

1. In a small bowl, combine warm water, honey, and yeast. Let mixture sit for about 5 minutes, or until yeast starts to bloom.
2. In a medium bowl, combine whole wheat flour, white flour, quinoa, and salt. Make a well in the center of the flour.
3. Pour the yeast mixture into flour mixture and stir until dough forms. Generously dust a work surface with flour and knead the dough for 8-10 minutes.
4. After kneading, shape dough into a ball and place back into the medium bowl. Cover with plastic wrap and let it rise in a warm place for 1 1/2 hours, or until dough has doubled in size.
5. After rising, bring a large pot of water to a boil and preheat oven to 450°F.
6. Punch dough down and divide it into 12 pieces (if dough is sticky, lightly dust with flour). Roll each piece into a ball, and then make a hole in the center of each bagel with your fingers and stretch the bagel out into an even ring.
7. Once the water is boiling, place bagels into the pot one at a time. Boil them for 2 minutes, then flip over and boil for an additional 2 minutes. Transfer bagels to a cookie sheet and repeat this process with remaining bagels.
8. For the topping, whisk egg white and water together in a small bowl. Brush over boiled bagels and sprinkle with wheat germ; bake for 25 minutes, or until bagels are light golden brown.
9. To make to avocado cream cheese spread, combine cream cheese, avocado, lemon juice, and salt in a food processor; pulse to combine. Spread over a warm bagel, add some red berries, if desired, and enjoy!

Gather ingredients.

Add 1 1/2 cups of warm water to a small bowl (or a 1-pint canning jar). Then add 2 t of honey.

Meanwhile, combine 1 cup of whole wheat flour, 2 cups of white flour, 1/3 cup of rinsed quinoa, and 1 t salt in a medium bowl.

Gather ingredients for avocado cream cheese spread.

To make to avocado cream cheese spread, add 4 ozs of cream cheese and 1 avocado to a food processor.

Add 1 T of lemon juice.

Pulse to combine. Spread over a warm bagel, add some berries, if desired, and enjoy!

    A healthy bagel? I love bagels – all kinds of bagels; cinnamon, blueberry, jalapeño cheese, and my all-time favorite the Everything bagel.
