BACON & CHIVE CORN CAKES (GLUTEN-FREE!)

MAKES: SIX 4” CAKES
1 cup Budget Mix® All-Purpose Gluten-free Baking Mix
1 1/8 cups milk
2 eggs
4 slices bacon, cooked and diced
1/2 cup frozen corn
1/3 cup shredded Manchego cheese
3 T minced chives
1 T butter, cut into pieces
1. In a medium bowl, whisk Budget Mix, milk, and eggs together.
2. Stir in bacon, corn, cheese, and chives.
3. Over medium-low heat, melt 1/2 T butter in a skillet and ladle corn cakes onto pan. Flip cakes after bubbles form and the edges have lost their sheen.
4. Melt another 1/2 T of butter in the skillet and repeat the process with remaining batter.
5. For sweet cakes, serve with maple syrup. For savory cakes, serve with salsa and sour cream.
Gather ingredients.

I am definitely sharing this one with my daughter who is gluten free! Wow, they look so delicious all stacked up. There is something about savory and sweet mixed together that is so satisfying.
