Today’s Recipe: Maple-Bacon Burgers

MAPLE-BACON BURGERS

PREP TIME: 10 MINUTES
COOK TIME: 45-52 MINUTES
MAKES: 4 BURGERS

8     slices bacon
3/4  cup maple syrup
1     lb ground beef
3/4  t salt
1/2  t pepper
1/4  cup barbecue sauce
4     hamburger buns

1. Preheat oven to 350°F. Line a baking sheet with aluminum foil.
2. Arrange bacon in a single layer on a baking sheet and bake for 20-25 minutes. Remove from oven, transfer to paper towels to drain, and transfer to parchment paper.
3. Pour maple syrup into a medium saucepan. Heat over medium heat until it reaches the soft-ball stage (235-240°F) on a candy thermometer, watching it carefully so the syrup doesn’t boil over.
4. Pour reduced syrup into a shallow bowl and coat bacon in syrup, working quickly so the syrup doesn’t cool down. Place coated bacon back on parchment until ready to serve.
5. Season ground beef with salt and pepper and form into four patties.
6. Grill patties over moderate heat for 10-12 minutes on each side, basting with barbecue sauce with every flip.
7. Serve burgers on toasted hamburger buns with maple bacon, tomatoes, lettuce, and grilled onions, if desired.

    Amazing summer burger! Maple candied bacon would be yummy on about anything, I think. I like the idea of making the bacon as bacon bits, covering it with the syrup and then placing it on a salad with blue cheese bits and Granny Smith apples.
