SIRLOIN FAJITA WRAPS

MAKES: 6 SERVINGS
3 8-oz sirloin steaks
¼ cup olive oil, divided
¾ t cumin
¾ t salt
½ t chili powder
2 bell peppers, assorted colors
1 zucchini
4 garlic cloves, peeled and minced
1. Fillet each steak, creating six ¼”-thick steaks; rub with 3 T olive oil. In a small bowl, combine cumin, salt, and chili powder; rub into steak.
2. Thinly slice bell peppers and zucchini. Line grill with a piece of foil and heat remaining olive oil over medium-high heat. Add peppers and zucchini; cook for about 3 minutes, or until tender-crisp.
3. Evenly divide vegetables and garlic between steaks and roll up, securing with a toothpick.
4. Grill over medium-high heat for 15 minutes, turning every 5 minutes.
