Today’s Recipe: Roasted Cheddar Parsley Cauliflower

ROASTED CHEDDAR PARSLEY CAULIFLOWER
PREP TIME: 10 MINUTES
COOK TIME: 35 MINUTES
MAKES: 4 SERVINGS

1      head cauliflower, cut into florets
1/3   cup fresh parsley, minced
2      shallots, peeled and diced
2      T olive oil
1/4   t salt
1/2   cup shredded sharp cheddar cheese

1. Preheat oven to 400°F.
2. Add cauliflower, parsley, shallots, olive oil, and salt to a medium bowl; toss to combine. Transfer to a 9” x 13” baking dish.
3. Bake for 30 minutes, stirring halfway through. Add cheese and bake an additional 5 minutes, or until cheese is melted.

 

Gather ingredients.

    This recipe is a good reminder of how to fix cauliflower. I rarely buy it because I can’t think of anything healthy and creative to do with it. Voila! A new simple recipe to try!

    I have some califlower to use, and was tired of it raw which 99.9% of the time is how I eat all of my veggies…….soooooo……THANKS FOR THIS RECIPE……peace….

  3. Sooo much healthier than the way my mom always served it , steamed with melted velveeta poured over top of it ( also on broccoli ) . But as a child of the 50s that was pretty daring at the time, and I cheerfully ate my veggies. I love roasted and or baked veggies and this is a super simple dish.

    Will try this! Roasted veggies are sooo good. When I roast them it’s easier to mix all the oil and seasonings, any small items together, then toss with the veggies and roast.

    Made this the other night and just loved it. Did not have shallots on hand so used white onions but it was still quite tastey. I love to find great vegetable recipes, plain veggies get boring after awhile.
