Today’s Recipe: Grilled Honey-Cardamom Pineapple Skewers

GRILLED HONEY-CARDAMOM PINEAPPLE SKEWERS

PREP TIME: 20 MINUTES, PLUS 1 HOUR SOAKING TIME
COOK TIME: 16 MINUTES
MAKES: 10 SKEWERS

10      wooden skewers, soaked in water for at least 1 hour before grilling
1        3-4 lb pineapple, peeled, cored, and cut into 1” x 1 1/2” chunks (about 5 1/2 cups)
1/4     cup honey
1        T whiskey
1/4     t pulverized cardamom seeds (about 2 pods)
1/4     t salt

1. Arrange pineapple chunks on skewers (about 5 pieces per skewer) and place on a baking sheet.
2. In a small bowl, whisk together honey, whiskey, cardamom seeds, and salt.
3. Brush honey mixture over pineapple, flip skewers over and brush other side.
4. Grill over medium-high heat for 4 minutes, flip over, and brush grilled side with any remaining honey mixture. Grill for an additional 4 minutes. Enjoy!

Soak 10 wooden skewers in water for at least 1 hour before grilling.

    I love cardamon. Did you know it is one of the most popular ingredients in scandinavian baked goods? I learned that fact from my mother-in-law who always made “Nana’s Waffles” (Nana was her mother and a Norwegian immigrant)when she came to visit. This recipe looks like a great new way to enjoy this unique spice as well. After all , pineapple is hard to beat when you put it on the grill!
