GARLIC SCAPE NAVY BEAN DIP
PREP TIME: 15 MINUTES
MAKES: 2 1/4 CUPS
12 garlic scapes (about 14 ozs)
1 15-oz can navy beans, drained and rinsed (about 1 3/4 cups)
1/3 cup fresh parsley leaves
1/4 cup olive oil
2 T fresh lemon juice (about 1 lemon)
1 T fresh dill
1/2 t salt
1/4 t pepper
1. Remove bulbs from garlic scapes. If needed, trim off any tough ends.
2. In a food processor or blender, combine all ingredients. Pulse until smooth. Enjoy!

This looks very easy to make. I like one dish recipes. I haven’t heard of garlic scapes before, so it will be nice to try something new. I also love how pretty of a green it turns out!
