Today’s Recipe: Tomato-Basil Stuffed Portobello Mushrooms

TOMATO-BASIL STUFFED PORTOBELLO MUSHROOMS

PREP TIME: 15 MINUTES
COOK TIME: 40-45 MINUTES
MAKES: 4 MUSHROOMS

6    Portobello mushrooms, stemmed
3/4 lb ground sweet Italian sausage
3    garlic cloves, peeled and minced (about 1 T)
4    ozs cream cheese (about 1/2 cup)
6    ozs baby spinach (about 4 cups), coarsely diced
3/4 cup fresh basil leaves, coarsely diced
1    tomato, diced (about 3/4 cup)
4    ozs mozzarella cheese, shredded (about 1 cup)

1. Preheat oven to 375°F.
2. Carefully scrape gills out of mushrooms with a spoon; discard gills. Place mushrooms in a 9” x 13” baking dish, cap sides down; set aside.
3. Add sausage and garlic to a large skillet. Cook over medium heat until sausage is browned; drain.
4. Add cream cheese, reduce heat to low, and cook until cream cheese has melted, stirring frequently. Remove from heat.
5. Stir in spinach, basil, and tomato. Evenly divide mixture between mushrooms and top with mozzarella cheese.
6. Bake for 25-30 minutes, or until mushrooms are tender and cheese has melted.

Evenly divide mixture between mushrooms and top with 4 ozs shredded mozzarella cheese (about 1 cup).
