Today’s Recipe: Cabbage & Bell Pepper Salad with Peanut Dressing

CABBAGE & BELL PEPPER SALAD WITH PEANUT DRESSING

PREP TIME: 35 MINUTES
MAKES: 14 CUPS

Dressing:
1/3 cup light coconut milk
1/3 cup creamy peanut butter
1/4 cup fresh cilantro leaves, minced
4 t fresh lime juice (about 1 lime)
1 T honey
1 t peeled and minced ginger (about 1” piece)
1/2 t salt
1/4 t red pepper flakes

Salad:
1/2  small cabbage, cored and quartered (about 6 cups shredded)
3 bell peppers, any color, halved, seeded, and cut into 1” strips (about 4 cups shredded)
16 ozs sugar-snap peas (about 5 cups shredded)
1 cup peanuts

1. Make dressing: whisk all ingredients together in a small bowl; set aside.
2. Using a food processor fit with a 2mm slicing blade, shred cabbage, peppers, and snap peas; add to a large bowl.
3. Add dressing and toss to coat.

Add 1/3 cup light coconut milk to a small bowl.

Add 1/3 cup creamy peanut butter.

Add 1/4 cup fresh cilantro leaves (minced).

Add 4 t fresh lime juice (about 1 lime).

Add 1 T honey.

Add 1/2 t salt.

Add 1/4 t red pepper flakes.

Whisk to combine and set aside.

Using a food processor fit with a 2mm slicing blade, shred 1/2 small cored and quartered cabbage (about 6 cups shredded). Add to a large bowl.

Shred 16 ozs sugar snap peas (about 5 cups).

Add to large bowl.

Shred 3 seeded bell peppers cut into 1” strips (about 4 cups).

Add to large bowl.

Add dressing and toss to coat.

Mix in 1 cup peanuts.

    This cabbage salad looks as delicious as it does beautiful. I like the idea that the dressing is not the usual mayonnaise base which I am not fond of at all. Plus the crunchy peanuts make it full of protein as well. It is a healthy meal all by itself which is perfect for a hot summer lunch!

    This salad looks super easy to make and really yummy. I’m not a big fan of peanuts but I think the dressing would be just fine. I will just leave out the extra peanuts!
