PEANUT BUTTER & CHOCOLATE POPCORN
PREP TIME: 10 MINUTES, PLUS 15 MINUTES DRYING TIME
COOK TIME: 6–8 MINUTES
MAKES: 2 QUARTS
2 qts popped popcorn (about 1/4 cup unpopped kernels)
1/3 cup coconut sugar
1/3 cup honey
1/4 t salt
1/2 cup creamy peanut butter
1/3 cup semi-sweet chocolate chips (we used Enjoy Life Mini Chips)
1. Line a large baking sheet with wax paper.
2. Add popcorn to a large bowl and set aside.
3. In a small saucepan, combine coconut sugar, honey, and salt. Bring to a simmer over medium heat, stirring just until sugar dissolves. Continue to simmer for 3 minutes without whisking. Remove from heat and stir in peanut butter.
4. Pour peanut butter mixture over popcorn and mix well. Transfer to prepared baking sheet and spread in a single layer.
5. Sprinkle chocolate chips over popcorn and dry for 15 minutes. Break up any large clusters and enjoy immediately or transfer to an airtight container and enjoy later.

Dry for 15 minutes. Break up any large clusters and enjoy immediately or transfer to an airtight container and enjoy later.
With a mug of hot cider, this would be an awesome treat for porch sitting’ in the cool evenings!
