Today’s Recipe: Apple & Brie Galette

APPLE & BRIE GALETTE

PREP TIME: 20 MINUTES
COOK TIME: 32-35 MINUTES
MAKES: 6 SERVINGS

Filling
3 large Granny Smith apples (about 1 3/4 lbs)
1/4 cup sugar
2 T cornstarch
1 T butter
1/2 t cinnamon
1/4 t nutmeg
8 ozs Brie cheese (if Brie isn’t your thing, replace with 8 ozs softened cream cheese)

Crust
1 1/2 cups MaryJane’s Budget Mix
1/2 cup cold butter, cut into pieces
1/3 cup cold water
1 egg, separated

1. Make filling: Peel and slice apples.
2. In a medium saucepan, combine apples, sugar, cornstarch, butter, cinnamon, and nutmeg. Cook over medium heat for about 7 minutes, or until apples are tender-crisp; set aside.
3. Preheat oven to 400°F. Line a large baking sheet with parchment paper.
4. Make crust: Add Budget Mix to a medium bowl and cut in butter using a pastry blender. In a small bowl, whisk water and egg yolk together, and add to the Budget Mix mixture. Stir just until dough forms (if necessary, gently knead dough to form into a ball).
5. Lightly dust a clean surface with flour and roll the dough into a circle that is roughly 14” in diameter.
6. Transfer the dough to prepared baking sheet.
7. Cut the rind off the Brie. Discard rind and slice cheese into pieces. Arrange cheese over bottom of the crust in a circle, leaving about 2” of space around edges. Add apples to the center and fold the edges of the circle toward the center, overlapping the dough with each fold.
8. Using a whisk or fork, beat the egg white until frothy, and brush onto the crust.
9. Bake for 25-30 minutes or until crust is golden brown.
