Today’s Recipe: Honey & Almond No-bake Cookies

HONEY & ALMOND NO-BAKE COOKIES

PREP TIME: 25 MINUTES, PLUS 1 1/2 HOURS SETTING TIME
COOK TIME: 5 MINUTES
MAKES: 18-20 COOKIES

1 1/4 cups thick rolled oats
1/2 cup chopped almonds
8 fresh dates, pitted and diced (about 1/2 cup)
1/4 cup finely shredded coconut
2 T whole flaxseeds
1/4 t salt
1/2 cup peanut butter
4 T butter
2 T honey

1. Line a baking sheet with waxed paper and set aside.
2. In a medium bowl, combine oats, almonds, dates, coconut, flaxseeds, and salt.
3. In a small saucepan, combine peanut butter, butter, and honey. Cook over medium heat, whisking until smooth and creamy.
4. Pour peanut butter mixture into oat mixture and mix well.
5. Drop cookies onto prepared baking sheet. Form into mounds with a spoon. Let cookies sit at room temperature until set (about 1 1/2 hours). To speed up the process, refrigerate until set. Store cookies in the refrigerator in an airtight container between layers of wax paper.

Cook over medium heat, whisking until smooth and creamy.

    These look absolutely delicious. I wonder if it would work replacing peanut butter with almond butter and maybe using pecans or walnuts for the 1/2 cup chopped almonds? Ashley finds the most delicious recipes!

    Just made them…they are wonderful…no added sugar sold me on them. I put them in a square glass pan and will cut and wrap them individually in wax paper to carry in my backpack while hiking.

    I love almonds. These would make for a perfect snack for on the go. Also, I bet they would hold me over for longer than other snacks.

    Hubs is on a FOD/MOP diet and that leaves out honey. We sometimes sub maple syrup in place of the honey…for instance in baklava. Do you think that would work here? Sounds very yummy!

    Can I substitute figs for dates and chia seeds or hemp hearts for flaxseeds as those are what I have on hand?

      We didn’t make it using those ingredients, but it seems like they’d work fine. Try it and let us know how it turns out!
