Today’s Recipe: Sausage, Zucchini & Hash Brown Sandwiches

SAUSAGE, ZUCCHINI & HASH BROWN SANDWICHES

PREP TIME: 15 MINUTES
COOK TIME: 15 MINUTES
MAKES: 8 SANDWICHES

1 lb breakfast sausage
1 small zucchini (about 6 ozs), shredded (about 3/4 cup)
1 cup frozen hash browns (about 3.5 ozs)
2 garlic cloves, peeled and minced (about 2 t)
1/4 t pepper
4 ozs Cheddar cheese, sliced
8 biscuits

1. In a medium bowl, combine sausage, zucchini, hash browns, garlic, and pepper. Form into 8 patties.
2. Heat a griddle or large skillet over medium heat. Cook patties for 6-7 minutes, flip over, and cook for an additional 5 minutes. Add cheese, and continue to cook until cheese is melted.
4. Serve sausage patties on biscuits.

Gather ingredients.

Add 1 lb breakfast sausage to a medium bowl. Add 1 cup frozen hash browns (about 3.5 ozs).

Add 1 shredded small zucchini (about 6 ozs or 3/4 cup).

    Ohh, Ashley, these look awesome! I currently have LOTS of zucchini at home since my daughter’s garden exploded the past 2 weeks. This recipe is perfect for yet another great way to use and enjoy the ever prolific and successful zucchini squash!!
