ROASTED GARLIC SPREAD W/OLIVE OIL & LEMON

Makes: 1/2 CUP
1 cup garlic cloves
3 T olive oil
1 T lemon juice (about 1/2 lemon)
1/4 t salt
1. Preheat oven to 450°F. Line a baking sheet with parchment paper or silicone baking mat.
2. Peel garlic cloves. To do this quickly, add cloves to bowl and cover with a similarly sized bowl (lighter, stainless-steel bowls work best). Shake vigorously for 20-25 seconds. Skins should readily peel from cloves. Remove skins and cut off bottom ends.
3. Place peeled and trimmed garlic cloves on prepared baking sheet and roast for 10 minutes. Cool slightly.
3. In a food processor or blender, combine garlic, olive oil, lemon juice and salt; pulse into a paste. Transfer to an airtight container and refrigerate for up to 3 days, or freeze and use as needed. For a quick, easy spread, we mixed 2 T softened butter with 2 t garlic spread and served with bread. It also makes a delicious addition to sautéed veggies, rice, hamburger patties, and roasted chicken.
