SUN-DRIED TOMATO & BASIL BISCUITS (W/GLUTEN-FREE CONVERSION)

MAKES: 8 BISCUITS
2 1/4 cups Organic Budget Mix® All-Purpose Original Baking Mix*
3 T butter, cut into pieces
3 ozs Parmesan cheese, shredded (about 3/4 cup)
2 ozs sun-dried tomatoes (about 1/2 cup), diced
1/2 oz fresh basil leaves (about 1/4 cup), minced (about 3 T)
1/2 t pepper
1 cup milk
1. Preheat oven to 425°F. Line a baking sheet with a silicone baking mat or parchment paper.
2. In a medium bowl, combine Budget Mix, butter, and cheese. Using a pastry blender, cut in butter and cheese until mixture resembles coarse crumbs.
3. Add tomatoes, basil, and pepper. Mix well and pour in milk; stir until stiff dough forms.
4. Shape dough into eight rounds roughly 3” in diameter (a little butter on your hands will keep the dough from sticking). Bake biscuits for 20 minutes, or until tops are golden.
*For gluten-free biscuits, substitute 2 cups Budget Mix® All-Purpose Gluten-free Baking Mix.
Gather ingredients.

Add 3 T minced basil leaves (about 1/2 oz or 1/4 cup whole leaves). Add 1/2 t pepper. Mix well.
Pour in 1 cup milk.
Stir until stiff dough forms.
Shape dough into eight rounds roughly 3” in diameter(a little butter on your hands will keep the dough from sticking).
Bake biscuits for 20 minutes, or until tops are golden.
Ohhh man, do those look delicious! I have lately had a new interest in savory baked goods. They can turn a salad into a satisfying summer meal. Right now , my Basil is doing well and this gives me another way to enjoy it.
I have made a similar yeast bread for a couple of years now but I really like the idea of biscuits! YUM!!
