Today’s Recipe: Watermelon, Blueberry & Cotija Salad

WATERMELON, BLUEBERRY & COTIJA SALAD

PREP TIME: 25 MINUTES
MAKES: 8 CUPS

Dressing:
1/4 cup crushed pineapple
2 T fresh lime juice (about 2 limes)
1/2 t salt

Salad:
6 cups cubed watermelon (about 3 1/2 lbs watermelon, weighed with rind)
10 ozs blueberries (about 1 3/4 cups)
8 ozs Cotija cheese, crumbled (about 3/4 cup) *For extra zing, replace crumbled Cotija with crumbled feta cheese.

1. Make dressing: In a small bowl, combine pineapple, lime juice, and salt; set aside.
3. Make salad: In a large bowl, combine watermelon, blueberries, Cotija, and dressing. Mix well. Refrigerate until ready to serve.

Assemble ingredients.

    Wow, what a perfect summer salad and 4th of July menu addition. Ashley, this looks so refreshing and delicious I wish I could reach into the computer and dish up some in a bowl to eat!

    I am not familiar with Cotija cheese. What could be substituted? I live near a cheese factory and still have never come across this cheese.??? Looks so good!
