Today’s Recipe: Carrot Greens Pesto

You know those leafy green tops that always look so appealing on a freshly picked bunch of carrots? Well, next time you find yourself with a pile that’s bound for the compost bin, try whipping up a batch of fresh carrot greens pesto. The greens have a very subtle herb flavor with a just the right amount of sweetness that make this pesto irresistible.

CARROT GREENS PESTO
PREP TIME: 15 MINUTES
COOK TIME: 30 MINUTES
MAKES: 1 CUP

1/2 yellow onion, peeled and halved
2 cups packed carrot green leaves (about 2 ozs)
1/2 cup blanched and slivered almonds
2 T olive oil
2 t fresh rosemary leaves (about 2 sprigs)
1/2 t red wine vinegar
1/4 t salt

1. Preheat oven to 350°F.
2. Place onion in an 8” x 8” glass baking dish and bake for 30 minutes. Remove from oven; cool slightly.
3. Add onion, carrot greens, almonds, olive oil, rosemary, red wine vinegar, and salt to a food processor. Pulse into a smooth paste. Enjoy with fresh veggie chips, with crackers, slathered on toasted bread, or any other way you dream up!

    Wow, does this sound delicious. I have never seen a way to use those beautiful green carrot tops and now this recipe is a must try. I also like the fact that it is a pesto that does not use garlic which is a plus of me as well.

    Now I have a whole row of carrots out in the garden, with lovely green tops just waiting to be made into pesto. Gotta give this a try!

    I’m going to hold on to this recipe for next year. Last year I had so many carrots this would have been a perfect recipe, but this year I traded out planting carrots for zucchini. Next year I will be sure to plant carrots again!
