Today’s Recipe: Sweet Potato Queso

SWEET POTATO QUESO

PREP TIME: 30 MINUTES
COOK TIME: 1 1/2 HOURS
MAKES: ABOUT 3 1/2 CUPS

1 sweet potato (about 12-14 ozs)
8 ozs cream cheese (about 1 cup)
1 jalapeño, seeded and diced (about 2 T)
1 cup cream
8 ozs sharp Cheddar cheese, shredded (about 2 cups)
1/4 t salt
1/8 t cayenne

1. Wrap sweet potato in aluminum foil. Place on a baking sheet and bake for 1 hour, 15 minutes, or until tender. Remove from foil and cool for about 15 minutes. Once sweet potato is cool enough, peel away skin.
2. Add whole sweet potato, cream cheese, and jalapeño to a medium saucepan. Cook over medium heat, mixing with a potato masher until smooth.
3. Pour in cream and continue to mix with potato masher.
4. Once mixture is hot and bubbling slightly, add Cheddar. Mix until cheese is melted and sauce is smooth. Add salt and cayenne; mix well. Serve warm with tortilla chips.

    Never mind tortilla chips, just ladle some up in a bowl with a spoon and a hunk of hot fresh bread!

    Oh delicious! Queso is so yummy. Just the other day I was making a list of foods to make for the Super Bowl and queso was one of them. I’m going to make this recipe instead. I like Winnie’s idea of using bread instead of chips!
