Today’s Recipe: Gluten-free Skillet Coffee Cake

SKILLET COFFEE CAKE (GLUTEN-FREE!)

PREP TIME: 25 MINUTES
COOK TIME: 35-40 MINUTES
MAKES: ONE 10” CAKE

Streusel:
2/3 cup MaryJane’s Gluten-free Budget Mix
2/3 cup brown sugar
1/2 cup walnuts, finely chopped
6 T butter, melted

Cake:
1 1/2 cups MaryJane’s Gluten-free Budget Mix
1/2 cup brown sugar
3/4 t cinnamon
1/4 t nutmeg
1 1/4 cups buttermilk
2 eggs
4 T butter, melted
1 t vanilla extract

1. Preheat oven to 375°F. Generously butter a 10” cast-iron skillet.
2. Make streusel: In a medium bowl, combine Budget Mix, brown sugar, walnuts, and butter. Mix until mixture resembles coarse crumbs; set aside.
3. Make cake: In a large bowl, combine Budget Mix, brown sugar, cinnamon, and nutmeg; mix well.
4. In a small bowl, combine buttermilk, eggs, butter, and vanilla. Whisk to combine (mixture will be slightly lumpy).
5. Pour buttermilk mixture into Budget Mix mixture and stir until a smooth batter forms. Pour batter into prepared skillet and smooth out top.
6. Spread streusel mixture evenly over cake batter, gently pressing down. Bake cake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Cool slightly.

    I love recipes that make in cast iron skillets. Not only is it easy, but I love the look for presentation afterwards. It just increases that feeling of warm, happy, cozy kitchen in the morning.

    I actually haven’t ever made anything in our cast-iron skillet. This sounds like a delicious recipe to try out for my first time. I bet it would taste good with some fruit on the side.

    This recipe sounds great! Could I ask, even though you raise cows, would coconut oil be good in place of butter or maybe half butter half coconut oil? Cholesterol you know? I love the taste of butter but am on to the benefits of coconut oil lately.

      The Farmhouse package of GF Budget Mix has a little over 2 cups in it. It should be just enough to complete this recipe.

    I made this coffee cake with the Whole Wheat Budget Mix. Didn’t have buttermilk so I used my homemade Greek yogurt. It’s a keeper . . . hubby really likes it too!
