Today’s Recipe: Shirred Eggs with Basil Cream & Roasted Tomatoes

SHIRRED EGGS W/BASIL CREAM & ROASTED TOMATOES

PREP TIME: 15 MINUTES
COOK TIME: 45 MINUTES
MAKES: 4 SERVINGS

6 ozs cherry tomatoes, halved (about 1 cup)
1/2 cup fresh basil leaves
1/2 cup cream
1 oz Parmesan cheese, shredded (about ¼ cup)
1/4 t salt
1/8 t pepper, plus more for garnish
4 eggs
1 oz crumbled feta cheese (about 2 T)

1. Preheat oven to 350°F. Line a large baking sheet with a silicone baking mat or parchment paper; set aside. Fill an 8” x 8” baking dish with 1” of water; set aside.
2. Add cherry tomatoes to prepared baking sheet in a single layer, cut side facing up. Place in preheated oven on bottom rack and roast for 45 minutes.
3. In a food processor or blender, combine basil, cream, Parmesan, salt, and pepper; pulse until smooth.
4. Evenly divide basil cream between four 8-oz wide-mouth canning jars. Make a divot in the center of the cream (this will keep the yolk centered). Crack an egg in each jar, and place jars in prepared baking dish with water. Sprinkle with pepper and bake for 25-30 minutes, or until cooked to preference.
5. Evenly divide roasted tomatoes and feta between jars. Enjoy!
