Today’s Recipe: Fried Feta

FRIED FETA

PREP TIME: 10 MINUTES
COOK TIME: 20 MINUTES
MAKES: 12 PIECES

12 ozs feta cheese
18 half-sheets fillo dough (we used The Fillo Factory’s Organic Fillo Dough)
6 T olive oil, divided
honey for serving

1. Slice feta into 12 pieces and pat dry.
2. Cut sheets of fillo dough in half to create 36 squares.
3. Place one slice of feta on 3 squares of fillo dough. Wrap up envelope style. Repeat with remaining 7 slices of feta and 21 half-sheets of fillo dough.
4. Line a plate with paper towels and set aside. Add olive oil to a medium skillet. Heat over medium heat until oil is shimmering. Reduce heat to medium-low and add 2-3 pieces of wrapped feta. Fry on each side for 1-2 minutes, or until golden brown. Place on prepared plate.
5. Repeat process with remaining pieces of wrapped feta, adding remaining 3 T of olive oil as needed. Drizzle fried feta with honey and serve immediately.

    I’ve had the Greek cheese which is meant to be fried (the name of it escapes me at the moment), but Feta is so much more readily available – and this looks delicious!
