Today’s Recipe: Spritz Cookies

These deceptively easy and irresistible little cookies are as much fun to make as they are to eat. All you need are some basic pantry staples and a cookie press. In our area, these handy devices can easily be found in secondhand stores. There are also newer versions available at a variety of online retailers.

SPRITZ COOKIES

PREP TIME: 15 MINUTES
COOK TIME: 12-15 MINUTES
MAKES: ABOUT 5 DOZEN COOKIES

1 cup butter, softened
3/4 cup sugar
2 egg yolks
1/2 t almond extract
1/4 t salt
2 cups plus 2 T flour
sprinkles (optional)

1. Preheat oven to 350°F.
2. In a medium bowl or stand mixer, cream butter and sugar together until light and fluffy. Add egg yolks, almond extract, and salt; mix until creamy.
3. Add flour and mix just until dough forms. Spoon dough into cookie press, fit with desired design disc and press cookies directly on to a large, ungreased baking sheet. If desired, add sprinkles to cookies before baking. Bake for 12-14 minutes, or until edges begin to turn light golden brown. Transfer cookies to a cooling rack to cool completely and enjoy!

    I grew up on Spritz cookies. Those little Christmas trees bring back so many memories! My oldest sister still makes up a small batch every year to enjoy.

    Several (as in fifteen or so) years ago, my best friend’s in-laws were downsizing. I received many great kitchen items including the same brand of cookie press pictured. The lady who used this press before me, died this past year. It will be with sweet remembrances of her that I put it to use this season.
