Within the next couple of months, I need to get imaginative. I&#8217;d truly NEVER heard of carrot pie. Have you? It was absolutely delicious.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"carrot_cake-0213\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2012\/02\/carrot_cake-0213.jpg\" alt=\"\" width=\"360\" height=\"241\" \/><\/p>\n<p style=\"text-align: center;\"><!--more--><\/p>\n<p>Initially, my DIL tried to use finely grated fresh carrots, but once they cooked\u00a0in the pie, they shed too much water and we ended up with a soupy mess. Follow the directions below for how to cook them first.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image wp-image-11358\" title=\"carrot_cake-0227\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2012\/02\/carrot_cake-0227.jpg\" alt=\"\" width=\"360\" height=\"240\" \/><\/p>\n<p>CARROT PIE<br \/>\nPREP TIME: 20 MINUTES PLUS 1 HOUR CHILLING TIME FOR PIE CRUST<br \/>\nCOOK TIME: 57-65 MINUTES PLUS 1 HOUR COOLING TIME<br \/>\nMAKES: 2-9\u201d PIES (ABOUT 16 SERVINGS)<\/p>\n<p>Pie Crust<br \/>\n2\u00bd\u00a0 cups flour<br \/>\n1\u00a0\u00a0 \u00a0t sugar<br \/>\n\u00bd\u00a0\u00a0 t salt<br \/>\n1\u00a0\u00a0 \u00a0cup cold butter<br \/>\n5\u00a0\u00a0 \u00a0tablespoons cold water<\/p>\n<p>Filling<br \/>\n2\u00a0\u00a0 \u00a0cups finely grated and cooked carrots*<br \/>\n1\u00a0\u00a0 \u00a0cup sugar<br \/>\n1\u00a0\u00a0 \u00a0t cinnamon<br \/>\n\u00bd \u00a0 t ground ginger<br \/>\n\u00bd\u00a0\u00a0 t salt<br \/>\n2\u00a0\u00a0 \u00a0eggs, slightly beaten<br \/>\n3\u00a0\u00a0 \u00a0cups milk<\/p>\n<p>* After finely shredding the\u00a0carrots, steam them in a double boiler. Gently press them into the bottom of a colander to express excess moisture.<\/p>\n<p>1. To prepare pie crust, combine flour, sugar, and salt in a medium bowl.<br \/>\n2. Using a pastry blender, cut in butter until mixture resembles coarse meal.<br \/>\n3. While stirring mixture, slowly add water until mixture begins to form a ball.<br \/>\n4. Shape into two discs and chill for 1 hour.<br \/>\n5. Once the dough has chilled, preheat oven to 400\u00b0F.<br \/>\n6. On a floured surface, roll out each disc and line two 9\u201d pie plates with the dough. Place a layer of foil over the bottom of each crust and then place pie weights or dry beans evenly over the foil to prevent the crust from bubbling or slipping during baking.<br \/>\n7. Bake the pie crusts at 400\u00b0F for 12-15 minutes, or until the outer edges start to brown slightly. Remove pie crusts from oven and remove foil and pie weights. Set aside to cool. Keep the oven set to 400\u00b0F.<br \/>\n8. To prepare filling, combine carrots, sugar, cinnamon, ground ginger, salt, eggs, and milk in a large bowl.<br \/>\n9. Divide filling between the two pre-baked pie crusts, cover edges of pie crust with foil or a pie crust shield to prevent crust from over-browning. Bake at 400\u00b0F for 45-50 minutes, or until the center of the pie has set.
