No problem! For those of you who are having a serious out-of-season craving, or just want to try something different, I present: Old-Fashioned Mock Cherry Pie.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"growing_jane-mock_cherry-0338\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2012\/02\/growing_jane-mock_cherry-0338.jpg\" alt=\"\" width=\"360\" height=\"259\" \/><\/p>\n<p style=\"text-align: center;\"><!--more--><\/p>\n<p>MOCK CHERRY PIE<br \/>\nPREP TIME: 25 MINUTES PLUS I HOUR CHILLING TIME FOR PIE CRUST<br \/>\nCOOK TIME: 1 HOUR PLUS 1 HOUR COOLING TIME<br \/>\nMAKES: 1-9\u201d PIE (about 8 servings)<\/p>\n<p>Crust:<br \/>\n2\u00bd\u00a0 cups flour<br \/>\n1\u00a0\u00a0\u00a0 t sugar<br \/>\n\u00bd\u00a0\u00a0 t salt<br \/>\n1\u00a0\u00a0 \u00a0cup cold butter<br \/>\n5\u00a0\u00a0 \u00a0T cold water<\/p>\n<p>Filling:<br \/>\n2\u00bd\u00a0 cups cranberries, fresh or frozen, diced<br \/>\n\u00be\u00a0\u00a0 cup raisins, finely chopped<br \/>\n1\u00a0\u00a0\u00a0 cup sugar<br \/>\n1\u00a0\u00a0\u00a0 T flour<br \/>\n\u00bc\u00a0\u00a0 cup orange juice<br \/>\n1\u00a0\u00a0\u00a0 t almond extract<br \/>\n1\u00a0\u00a0\u00a0 T butter<\/p>\n<p>1. To prepare pie crust, combine flour, sugar, and salt in a medium bowl.<br \/>\n2. Using a pastry blender, cut in butter until mixture resembles coarse meal.<br \/>\n3. While stirring mixture, slowly add water until mixture begins to form a ball.<br \/>\n4. Shape into two disks and chill for 1 hour.<br \/>\n5. Once the dough has chilled, preheat oven to 400\u00b0F.<br \/>\n6. To prepare filling, add cranberries, raisins, sugar, and flour to a medium bowl. Stir to combine.<br \/>\n7. On a floured surfacem roll out one disk of dough to line the bottom of a 9\u201d pie plate. Pour the filling into the pie plate, and then mix together\u00a0the orange juice and almond extract and\u00a0pour over the\u00a0filling. Dot the filling with butter.<br \/>\n8. Roll out the second disk of dough for the top. Shape edges according to preference. Cut slits in the top of the pie and place on a baking sheet.<br \/>\n9. Place in the oven and bake at 400\u00b0F for 1 hour. To prevent over-browning, cover the edges with foil or a pie crust shield.<br \/>\n10. Remove from oven and allow pie to cool for at least 1 hour before serving.<\/p>\n<p style=\"text-align: center;\">Gather ingredients and preheat oven to 400\u00b0F.<\/p>\n<p style=\"text-align: on a baking sheet and bake at 400\u00b0F for 1 hour, covering edges of pie crust with tin foil or pie crust edge protector the last 20 minutes.<\/p>\n<p style=\"text-align: center;\"><img
