I\u2019m Merit Badge Awardee Jane (MBA Jane for short). In my<\/span> <a href=\"http:\/\/www.raisingjane.org\/journal\/10477\">former life<\/a> \u2026<\/p>\n<p>After the trauma I endured turning off all my electronics in my last badge attempt, I decided to try a merit badge that would be a little less on the stressful side, a little more on the yummy side: namely, the <a href=\"http:\/\/www.farmgirlsisterhood.org\/badges-fk-unprocessed-kitchen.asp\">Unprocessed Kitchen badge<\/a>\u2014purchasing a guilty pleasure item at the grocery store and then replicating it (organically, of course) at home.<\/p>\n<p>Now, I\u2019ve never been much of a cook, but I am motivated by some things, and salt and vinegar potato chips are one of them! Nothing has put me in the gym faster than a midnight binge of salty, greasy goodness. Maintaining my\u00a0figure would be a heck of a lot easier without them, you know what I\u2019m saying? They may, in fact, be &#8230;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image wp-image-34639\" alt=\"gladsome_potato_chips-0838\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2012\/08\/gladsome_potato_chips-0838.jpg\" width=\"360\" height=\"473\" \/><!--more--><\/p>\n<p>&#8230; my utter downfall, but today I embrace them. Gently, of course, so as not to crush any perfectly shaped bites of deliciousness.<\/p>\n<p>Anyhow, I figured they\u2019d be simple enough to replicate, and when I found some totally delightful\u00a0potatoes at the farmers&#8217; market (Organic? But naturally!), I was really set for success. Finding organic vinegar was a little trickier, but never let it be said that I don\u2019t know how to shop for something in particular. I spent two weeks tracking down the perfect pair of leopard-print ballet flats once; I wasn\u2019t worried about a teensy bottle of organic vinegar holding me back.<\/p>\n<p>Who knew there were different kinds and different shades of salt? Me being me, and me being fabulous, I went with the abundant pink one.<\/p>\n<p>Are you kidding me? Potato chips with pink salt? I think I\u2019m in love. Hold me.<\/p>\n<p>Slicing those roly-poly potatoes was a chore. Later, I learned there are handy tools for such things, one of the tools is called a mandolin, but at the time, I couldn\u2019t figure out how a banjo was going to help me, so I just used a good, sharp knife.<\/p>\n<p>Organic, extra-virgin olive oil set me back a week\u2019s worth of spending money, but I figure it\u2019s good stuff and the label was way awesome.<\/p>\n<p>MBA JANE&#8217;S SALT AND VINEGAR POTATO\u00a0CHIPS<\/p>\n<p>2\u00a0\u00a0 \u00a0small organic potatoes (about \u00bd lb), thinly sliced<br \/>\n2\u00a0\u00a0 \u00a0T organic apple cider vinegar<br \/>\n2\u00a0\u00a0 \u00a0T organic olive oil<br \/>\n\u00bc\u00a0\u00a0 \u00a0t pink kosher salt, plus more to taste<\/p>\n<p>1. In a medium bowl, toss together potatoes, vinegar, and olive oil. Let sit for about 20 minutes. (They\u2019re shy, so encourage some mingling by tossing around once or twice while they sit.)<br \/>\n2. Line two cookie sheets with foil and sprinkle with \u00bc t salt. Spread potatoes onto cookie sheets. Throw a lil&#8217; extra salt on top if you are into that sort of thing.<br \/>\n3. Bake at 400\u00b0F until brown and crispy. (You\u2019ll need to bake each cookie sheet separately so that the potatoes aren\u2019t crowded. I told you they were shy. After baking, salt to taste. What\u2019s that you say? Something about portion control?
