WHITE DIVINITY CAKE
\nPREP TIME: 30 MINUTES, PLUS 1 HOUR COOLING
\nCOOK TIME: 40-45 MINUTES
\nMAKES: ONE 8″ CAKE<\/p>\n

6\u00a0\u00a0 \u00a0T butter, softened
\n2\u00a0\u00a0 \u00a0cups sugar, divided
\n3\u00a0\u00a0 \u00a0cups flour
\n2\u00a0\u00a0 \u00a0t baking powder
\n1\u00bc cups milk
\n1\u00a0\u00a0 \u00a0t vanilla
\n6 \u00a0\u00a0 egg whites<\/p>\n

1. Preheat oven to 325\u00b0F. Add butter to a large bowl. Set \u00bd cup of sugar aside and add the remaining 1\u00bd cups of sugar to the butter. Using an electric mixer, beat until combined.
\n2. In a medium bowl, combine the flour and baking powder. In small bowl, combine the milk and vanilla.
\n3. Add about 1\/3 of the flour mixture to the butter mixture, and alternate with\u00a0\u00bd of milk. Continue until all ingredients are combined.
\n4. In a large bowl or stand mixer, beat egg whites until they are white and foamy. Pour in the reserved \u00bd cup of sugar and continue to beat until stiff peaks form.
\n5. Gently fold about \u00bc of the egg whites into the cake batter, and then fold in remaining egg whites.
\n6. Divide batter between two 8″ cake pans. Bake for 40-45 minutes, or until the top springs back when gently pressed. Cool for about 30 minutes, then remove from pans and transfer to a wire rack to cool for another 30 minutes.
\n7. After cooling, use a large knife to level off one of the cakes. Place leveled cake on a serving platter or cake stand. Frost the center (see our White Chocolate Frosting recipe), and place the other cake on top. Frost the entire cake and decorate with blueberries and strawberries.<\/p>\n

Stir to combine.<\/p>\n

Add another 1\/3 of the flour mixture to the bowl.<\/p>\n

Stir to combine.<\/p>\n

Pour in the remaining milk.<\/p>\n

Stir to combine, then add remaining flour and combine well.<\/p>\n
