Preheat oven to 350\u00b0F. In a large bowl, combine sour cream and salsa. Remove about \u00bd cup of the mixture and set aside. Add chicken, olives, and about half of the shredded cheese to the remaining sour cream and salsa mixture. Stir to combine.<br \/>\n2. Lightly butter a 9\u201dx13\u201d baking dish. Fill each tortilla and roll it up, securing each end. Place the enchiladas into prepared baking dish.<br \/>\n3. Pour reserved sour cream and salsa mixture over the enchiladas and top with remaining cheese. Bake for about 30 minutes, or until cheese is browning and enchiladas are heated through.
