(If you read my magazine or CLUCK newsletter, you\u2019re already familiar with Alyson.)<\/p>\n<p>For some of my Geography Journal entries she\u2019ll take you to each of those stops (and more!). Today she is off to Portugal to sample the delicious cuisine of\u00a0Peniche.<\/p>\n<p>Take it from here. It\u2019s all yours, Aly!!!!!<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2266\" title=\"geography-alyson_portugal-1386\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1386.jpg\" alt=\"\" width=\"360\" height=\"480\" \/><\/p>\n<p style=\"text-align: center;\"><!--more--><\/p>\n<p><span class=\"Apple-style-span\" style=\"font-family: Verdana, Arial, sans-serif;\">About an hour north of Portugal\u2019s capitol city of Lisbon, lies the ancient town of Peniche\u2014considered the Western most point of the European continent and Portugal\u2019s largest fishing port.<br \/>\n<\/span><\/p>\n<p style=\"text-align: center;\"><span class=\"Apple-style-span\" style=\"font-family: Verdana, Arial, sans-serif;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2288\" title=\"geography-alyson_portugal-1469\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1469.jpg\" alt=\"\" width=\"360\" height=\"480\" \/>Peniche is a crumbly, well-worn village where fishing is, and always has been, a way of life. For generations, the people of Peniche have lived off the sea and, even today, evidence of that lifestyle is everywhere\u2014from scenic, fish-flanked restaurants, to\u00a0<\/span><span class=\"Apple-style-span\" style=\"line-height: 19px;\">side streets lined with the catch of the day.<\/span><\/p>\n<p style=\"text-align: center;\"><span class=\"Apple-style-span\" style=\"font-family: Verdana, Arial, sans-serif; line-height: 19px;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2271\" title=\"geography-alyson_portugal-1141\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1141.jpg\" alt=\"\" width=\"360\" height=\"264\" \/><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2340\" title=\"geography-alyson_portugal-1537\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1537.jpg\" alt=\"\" width=\"288\" height=\"384\" \/><\/span><\/p>\n<p><span class=\"Apple-style-span\" style=\"font-family: Verdana, Arial, sans-serif;\">On one residential street, outside an old stucco villa, a clothesline caught my eye. Hanging from clothespins were flattened, freak-show looking fish.\u00a0<\/span>As I was inspecting this scene, one of the residents from the home appeared.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2274\" title=\"geography-alyson_portugal-1185\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1185.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p>In nearly perfect English, she described with pride her family\u2019s long heritage in the fishing industry. She invited\u00a0me into the entry courtyard of the home where more fish dried and more family members scurried about.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2276\" title=\"geography-alyson_portugal-1191\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1191.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p>It was explained to me that the day the fish is caught, it\u2019s cleaned and put in containers of very coarse salt.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2324\" title=\"geography-alyson_portugal-1200\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1200.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p>After several days of curing in salt, the fish are laid (or hung) out to dry for several more days.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2275\" title=\"geography-alyson_portugal-1187\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1187.jpg\" alt=\"\" width=\"281\" height=\"374\" \/><\/p>\n<p>Once the process is complete,\u00a0the salty, dried fish (which I sampled) will last for years (according to my unwitting expert, plucked from obscurity).<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2281\" title=\"geography-alyson_portugal-1194\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1194.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p>To prepare these dried carcasses, the fish are rinsed and soaked to remove the salt and consequently\u00a0rehydrated. From there, the fish can be put into any number of dishes served in this region.<\/p>\n<p>While this tried and true tradition works well for preserving the fish,\u00a0I still prefer mine freshly caught and cooked. For that, I turned to a regional favorite\u2014a seafood-filled dish called caldierada, which I very much enjoyed during my visit and then replicated upon my return home to the states.<\/p>\n<h2>Portuguese Fish Stew<\/h2>\n<h2><span class=\"Apple-style-span\" style=\"color: #000000; font-size: 13px; line-height: 19px;\">MAKES: 6 SERVINGS<\/span><\/h2>\n<p>3 T olive oil<br \/>\n2 medium yellow onions, finely sliced into rings<br \/>\n5\u00a0 cloves garlic, minced<br \/>\n2\u00a0 lbs russet potatoes, finely sliced<br \/>\n1\u00a0 medium green bell pepper, cored, seeded,\u00a0roughly\u00a0diced<br \/>\n1 \u00a0 16-oz. can whole tomatoes,\u00a0undrained, crushed by hand<br \/>\n1\u20442 \u00a0t crushed red pepper flakes<br \/>\n2\u00a0 bay leaves, broken in half<br \/>\n2\u00a0 cups dry white wine<br \/>\nSalt and freshly ground black pepper, to taste<br \/>\n2 \u00a0lbs\u00a0various shellfish and fish (halibut, salmon, cod, swordfish) cut into 1 1\u20442&#8243;\u00a0chunks<br \/>\n1\/2\u00a0 cup cilantro, minced<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">Slice up the potato, onion and mince the garlic.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2289\" title=\"geography-alyson_portugal-0601\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0601.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Slice up the green pepper.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2294\" title=\"geography-alyson_portugal-0612\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0612.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">In a large, oven-proof pot, saut\u00e9 onion and garlic for 5-7 minutes in olive oil.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2290\" title=\"geography-alyson_portugal-0629\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0629.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">\u00a0While onions and garlic are saut\u00e9ing, open one can of whole undrained tomatoes and crush by hand.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2295\" title=\"geography-alyson_portugal-0617\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0617.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Add potatoes.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2292\" title=\"geography-alyson_portugal-0635\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0635.jpg\" alt=\"\" width=\"360\" height=\"270\" \/>Add green peppers.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/www.raisingjane.org\/journal\/2263\/geography-alyson_portugal-0637\" rel=\"attachment wp-att-2296\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2296\" title=\"geography-alyson_portugal-0637\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0637.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/a><\/p>\n<p style=\"text-align: center;\">\u00a0Then the tomatoes, pepper flakes and bay leaf &#8230;<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2297\" title=\"geography-alyson_portugal-0645\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0645.jpg\" alt=\"\" width=\"360\" height=\"270\" \/>&#8230; and wine.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2298\" title=\"geography-alyson_portugal-0647\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0647.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Cover and simmer one hour, stirring occasionally. Add shellfish (if using) and cover pot; cook until shells just begin to open, about 4\u20135 minutes.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2305\" title=\"geography-alyson_portugal-0650\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0650.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Add fish and continue to cook, covered, until all shellfish are opened and fish are cooked through, about 5\u20136 minutes more.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2306\" title=\"geography-alyson_portugal-0658\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0658.jpg\" alt=\"\" width=\"360\" height=\"270\" \/>Cut up some cilantro.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2374\" title=\"geography-alyson_portugal-0649\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0649.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Transfer fish stew to a large serving bowl and sprinkle with cilantro. Serve with grilled bread.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2307\" title=\"geography-alyson_portugal-0660\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-0660.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">On the weekends, regional visitors flock to Peniche to picnic along the seawall. Plates are piled high with chicken, rice, vegetables, and bread. Like most of their coastal cuisine, sardines are very simply prepared\u2014salted, grilled and served whole\u2014allowing the freshness to speak for itself.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2337\" title=\"geography-alyson_portugal-1463\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/09\/geography-alyson_portugal-1463.jpg\" alt=\"\" width=\"360\" height=\"270\" \/>Just off the coast of Peniche is the island of Berlenga\u2014a beacon for hikers, campers, and tourists alike.
