Have another look:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-185\" title=\"20110422-Apr8-3\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/growing_jane\/20110422-Apr8-3.jpg\" alt=\"\" width=\"360\" height=\"360\" \/><\/p>\n<p>Yup\u2014they\u2019re eensy-weensy, teeny-tiny potatoes. And since some of you are already getting your seed catalogs and dreaming about summer gardening, I just had to share my need-something-easy, not-in-the-mood-to-cook\u00a0cheesy potato recipe with you.<\/p>\n<p>After all, the potato (AKA \u201cspud\u201d or an \u201cearth apple\u201d) has been the victim of some seriously misguided criticism. In the last 15 years, we\u2019ve heard potatoes blamed for everything from obesity to diabetes to heart disease. Now that we\u2019ve all had a moment to lose our heads over this misinformation, it would seem that nutritionists are finally combating the rumors and praising the almighty spud for its nutritional value. Go figure\u2014six million Irish could\u2019ve told us that! (Or 1 million Idahoans.)<\/p>\n<p>Now, no one in their right mind would\u00a0go on a\u00a0<a href=\"http:\/\/www.bbc.co.uk\/news\/magazine-11864290\">potato-only diet<\/a>, but I will say this: they\u2019re nutritious, tasty, easy to prepare, and\u00a0kid-friendly. They\u2019d\u00a0be the single most important survival crop to grow at home if there were food shortages.<\/p>\n<p>Do you grow a particular variety of potato?\u00a0Our favorite is the Desiree. It isn\u2019t prone to disease, so every year we plant some from our previous year\u2019s crop. It\u2019s been years since we\u2019ve purchased seed potatoes.<\/p>\n<p>Here&#8217;s a shot taken last June\u00a0of our Desiree potatoes\u00a0that had been\u00a0in storage for nine months already. They&#8217;re still looking pretty good and tasting even better. In fact, we were getting ready to serve them to our summer B&amp;B guests when I snapped this photo.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-191\" title=\"20110422-potatoes\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/growing_jane\/20110422-potatoes.jpg\" alt=\"\" width=\"240\" height=\"360\" \/><\/p>\n<h2>Potato &amp; Ham BakeOver<\/h2>\n<p>4\u20136 servings<\/p>\n<p class=\"border-std-bottom\" style=\"padding-bottom: 5px;\">Ingredients:<\/p>\n<ul class=\"ingredients\">\n<li>3 cups potatoes cut into bite-size pieces, or whole tiny, baby potatoes<\/li>\n<li>1 cup pre-cooked ham, cubed<\/li>\n<li>\u00bc cup chopped onion<\/li>\n<li>\u00bd t sea salt<\/li>\n<li>1 T fresh thyme or 1 tsp dried<\/li>\n<li>\u00bc t nutmeg<\/li>\n<li>\u00be cup shredded Gruy\u00e8re cheese<\/li>\n<li>1 \u00bd cups <a href=\"https:\/\/shop.maryjanesfarm.org\/Budget-Mix-All-Purpose-Original\">Organic Budget Mix<sup>\u00ae<\/sup>\u00a0All-Purpose Original Baking Mix<\/a><\/li>\n<li>3 T butter<\/li>\n<li>\u00bd cup water<\/li>\n<\/ul>\n<p class=\"border-std-bottom\" style=\"padding-bottom: 5px;\">Directions:<\/p>\n<ol class=\"directions\">\n<li class=\"no-image\">Preheat oven to 425\u00b0F.<\/li>\n<li class=\"no-image\">Place Budget Mix in a medium bowl.<\/li>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-186\" title=\"20110422-Apr8-5\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/growing_jane\/20110422-Apr8-5.jpg\" alt=\"\" width=\"285\" height=\"246\" \/><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-187 clear\" title=\"20110422-Apr8-6\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/growing_jane\/20110422-Apr8-6.jpg\" alt=\"\" width=\"360\" height=\"290\" \/>Cut in butter with a fork until mixture resembles coarse crumbs.<\/li>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-188\" title=\"20110422-Apr8-7\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/growing_jane\/20110422-Apr8-7.jpg\" alt=\"\" width=\"309\" height=\"240\" \/>Gradually add the water, stirring with a wooden spoon until a sticky dough forms.<\/li>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-189\" title=\"20110422-Apr8-8\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/growing_jane\/20110422-Apr8-8.jpg\" alt=\"\" width=\"360\" height=\"360\" \/>Turn the dough out onto a lightly floured surface. Roll or pat out a 9-inch crust.<\/li>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-190\" title=\"20110422-Apr8-9\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/growing_jane\/20110422-Apr8-9.jpg\" alt=\"\" width=\"360\" height=\"300\" \/>Saut\u00e9 ham, onions, potatoes, salt, thyme, and nutmeg in butter or oil in your <a href=\"http:\/\/shop.maryjanesfarm.org\/store\/p\/34-Perfect-BakeOver-Skillet.aspx\">Perfect BakeOver skillet<\/a> for 10 minutes or until potatoes are slightly soft.<\/li>\n<li class=\"no-image\">Sprinkle the gruyere on top. As your BakeOver cooks, the cheese will melt throughout.<\/li>\n<li class=\"no-image\">Place the dough on top of the meat and vegetables, still in the skillet, like a pie crust.<\/li>\n<li class=\"no-image\">Bake for 20 minutes, or until golden brown.<\/li>\n<li><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-183\" title=\"20110422-Apr8-13\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/growing_jane\/20110422-Apr8-13.jpg\" alt=\"\" width=\"360\" height=\"342\" \/>Put a plate face down over the BakeOver and then just flip the contents upside down.
