Posing as a group for about an hour for photos is ALWAYS an ingredient at any family reunion. Ours was no different. But you know those old family photos (vintage) from 80 years ago that we now\u00a0cherish?<\/p>\n<p style=\"text-align: center;\">\u00a0Patience.<\/p>\n<p style=\"text-align: center;\"><!--more--><\/p>\n<p style=\"text-align: center;\">Mom caught the photo takers instead for her album.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3034\" title=\"growing_jane-fridays_chicken-1040625\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/growing_jane-fridays_chicken-1040625.jpg\" alt=\"\" width=\"360\" height=\"636\" \/><\/p>\n<p style=\"text-align: center;\">Niece Adria ate way too many fresh strawberries from auntie&#8217;s garden.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3183\" title=\"growing_jane-fridays_chicken-1040633\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/growing_jane-fridays_chicken-10406331.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p>As is always the case,\u00a0my relations\u00a0brought food but because most\u00a0our kin are farmers, the conversation ALWAYS comes back around to garden this and canning that.\u00a0Garden Olympics, my mother calls it. &#8220;I canned 32 jars of peaches this year.&#8221; And &#8220;I picked a bushel of &#8216;maters this morning.&#8221; Or\u00a0&#8220;best year ever for berries.&#8221;<\/p>\n<p style=\"text-align: center;\">But we did come away with a handy tip regarding KALE and CHARD.<\/p>\n<p style=\"text-align: center;\">&#8220;Just stack the leaves in a freezer container. No need to blanch or nothin&#8217;. Below is how frozen kale looks right from the freezer. If you&#8217;re quick (it thaws mighty fast) you can shatter it like glass. Perfect for second-day-chicken-soup (below).<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3144\" title=\"growing_jane-chicken_dinner-8419\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/growing_jane-chicken_dinner-8419.jpg\" alt=\"\" width=\"360\" height=\"240\" \/><br \/>\n&#8220;So on the first day, she made roasted chicken.&#8221;<\/p>\n<h2>MEGAN\u2019S ROASTED CHICKEN<\/h2>\n<p>PREP TIME: 15 MINUTES<br \/>\nCOOK TIME: 1 HOUR 20 MINUTES<br \/>\nSERVES: 4 WITH LEFTOVERS FOR CHICKEN SOUP<\/p>\n<p>1\u00a0\u00a0\u00a0 4 lb Chicken<br \/>\n1\u00a0\u00a0\u00a0 t dried rosemary*<br \/>\n1\u00a0\u00a0\u00a0 t dried thyme*<br \/>\n1\u00a0\u00a0\u00a0 lemon, halved<br \/>\n1\u00a0\u00a0\u00a0 t pepper, plus 1\/8 t pepper<br \/>\n1\u00a0\u00a0\u00a0 t salt, plus 1\/8 t salt<br \/>\n4\u00a0\u00a0\u00a0\u00a0 potatoes, quartered<br \/>\n2\u00a0\u00a0\u00a0 T olive oil, plus 1 t olive oil<br \/>\n* if using fresh rosemary and thyme, use 1 T of each<\/p>\n<p>SCROLL DOWN FOR STEP BY STEP PHOTOS<\/p>\n<p>1. Preheat oven to 400\u00b0F.<br \/>\n2. Remove the bag of giblets from the cavity and refrigerate (you will use it in the soup recipe the next day.)<br \/>\n3. If using fresh herbs, dice together.<br \/>\n4. Rub the inside of the chicken with rosemary, thyme, salt, pepper and add lemon halves.<br \/>\n5. Place in the middle of glass baking dish. Drizzle chicken with olive oil.<br \/>\n6. Toss quartered potatoes with olive oil, salt and pepper.<br \/>\n7. Place potatoes around the chicken.<br \/>\n8. Cook for 1 hour and 20 minutes or until internal temperature of the legs reaches 160\u00b0F.<br \/>\n9. Remember to baste chicken with juices in the pan at least twice during baking.<br \/>\n10. Remove chicken from oven and let rest for 5 minutes.<br \/>\n11. Slice and serve with your favorite vegetable.<\/p>\n<p style=\"text-align: center;\">\u00a0Pick fresh herbs. center;\">Place in the middle of glass\u00a0baking dish and drizzle chicken with 2 tablespoons\u00a0olive oil.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" \/>\nSERVES: 4 WITH LEFTOVERS FOR LUNCH THE NEXT DAY \ud83d\ude42<\/p>\n<p>Chicken meat and bones remaining from your roasted chicken the day before<br \/>\n(remember to remove the lemon from the middle of the chicken).<\/p>\n<p>reserved chicken giblets<br \/>\n4\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 potatoes, cubed<br \/>\n4\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 carrots, sliced<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 leek, sliced<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 onion, peeled and minced<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 lb kale, chopped<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 10 oz bag of frozen corn<br \/>\nsalt and pepper to taste<br \/>\nparmesan and a spicy pepper for garnish<\/p>\n<p>1. Cover remaining chicken meat, bones and giblets with water in a large soup pot.<br \/>\n2. Add salt and pepper.<br \/>\n3. Bring to a boil and simmer for two hours.<br \/>\n4. Remove all of the chicken parts from the broth. Set aside to cool.<br \/>\n5. Add potatoes, garlic, carrots, leek and onion. Bring contents to a boil. Simmer for 45 minutes or until potatoes are soft.<br \/>\n6. Remove remaining chicken from bones and cut into bite size pieces. Add chicken, frozen corn and kale.<br \/>\n7. Cook for 15 minutes or until kale is soft.<br \/>\n8. Serve with Parmesan, spicy pepper (finely chopped) and buttered biscuits.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3149\" title=\"growing_jane-chicken_dinner-8358\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/growing_jane-chicken_dinner-8358.jpg\" alt=\"\" width=\"360\" height=\"240\" \/><\/p>\n<h2>NO FUSS <a href=\"http:\/\/shop.maryjanesfarm.org\/store\/c\/36-Budget-Mix.aspx\">BUDGET MIX\u2122<\/a> BISCUITS<\/h2>\n<p>PREP TIME: 15 MINUTES<br \/>\nBAKE TIME: 10-15 MINUTES<br \/>\nYIELD: SIXTEEN 2\u00bd\u201d\u00a0BISCUITS<\/p>\n<p>2\u00a0 2\/3 cups <a href=\"https:\/\/shop.maryjanesfarm.org\/Budget-Mix-All-Purpose-Original\">Organic Budget Mix<sup>\u00ae<\/sup>\u00a0All-Purpose Original Baking Mix<\/a><br \/>\n1\u00a0 1\/3 cup milk<br \/>\n6 T cold butter<\/p>\n<p>1. Preheat oven to 450\u00b0F.<br \/>\n2. Cut butter into the Budget Mix. (Cut the butter into small pieces that resemble coarse crumbs for soft, fluffy biscuits: or leave some of the pieces pea-sized for flakier biscuits.)<br \/>\n3. Place Budget Mix in large bowl and make a depression in the center of the mix to receive the liquid.<br \/>\n4. Pour the milk all at once. Beat with a wooden spoon for only about 15 strokes until stiff dough forms. Do not over mix.<br \/>\n5. Turn the dough out onto a lightly floured surface and knead gently about 8 \u2013 10 times to smooth dough. Sprinkle with more flour if dough is too sticky.<br \/>\n6. Roll or pat dough to about \u00bd inch thickness.<br \/>\n7. Dip biscuit cutter in flour and cut out biscuits (for biscuits that rise evenly, don\u2019t twist cutter). Place on an ungreased baking sheet (1 inch apart for crusty sides or touching for soft sides).<br \/>\n8. Bake for 10 \u2013 15 minutes or until tops are a light golden brown.<br \/>\n9.
