The author of <i>The Omnivore&#8217;s Dilemma <\/i>(and many other books) has just released another must-read manifesto called <a href=\"http:\/\/www.amazon.com\/Cooked-A-Natural-History-Transformation\/dp\/1594204217\/ref=sr_1_1?ie=UTF8&amp;qid=1367870592&amp;sr=8-1&amp;keywords=cooked\"><i>Cooked: A Natural History of Transformation<\/i><\/a>.<\/p>\n<p>This is great news in itself, but I&#8217;m equally thrilled that this publication has swung the spotlight back in Michael&#8217;s direction.<\/p>\n<p>This man has things to say worth hearing.<\/p>\n<p>Michael Pollan has emerged as one of the world&#8217;s most eloquent and persuasive voices for food preservation.<\/p>\n<p>Not &#8220;preservation&#8221; as in canning and dehydration \u2026 we&#8217;re talking the protection and long-term security of food as we know it\u2014or, rather, as our ancestors knew it.<\/p>\n<p>Lest we forget and begin believing that our daily bread originates in a factory where genetically finagled wheat is impregnated with pesticides, Michael Pollan is intent on buzzing in our ears and bringing our consciousness back down to the soil.<\/p>\n<p>He&#8217;s sort of like a neatly shaven <a href=\"http:\/\/www.amazon.com\/Lorax-Classic-Seuss-Dr\/dp\/0394823370\/ref=sr_1_1?s=books&amp;ie=UTF8&amp;qid=1367871077&amp;sr=1-1&amp;keywords=the+lorax\">Lorax<\/a> who speaks for our food.<\/p>\n<p><!--more--><\/p>\n<p>In his latest book, Pollan makes the point that the deceptively simple ritual of cooking may be <i>the most important action<\/i> that any of us can take to preserve a heritage of real, healthy food that will stand the test of time.<\/p>\n<p>How?<\/p>\n<p>Just listen to what he has to say:<\/p>\n<div style=\"text-align: center;\"><iframe loading=\"lazy\" style=\"margin: 0px auto;\" src=\"http:\/\/www.democracynow.org\/embed\/story\/2013\/5\/6\/michael_pollan_on_how_reclaiming_cooking\" height=\"270\" width=\"360\" frameborder=\"0\"><\/iframe><\/div>\n<p>&nbsp;<\/p>\n<p>&nbsp;\t\t<\/p>\n","protected":false},"excerpt":{"rendered":"<p>You&#8217;ve probably heard Michael Pollan&#8217;s name popping up in the media again lately.
