(If you read my magazine or CLUCK newsletter, you\u2019re already familiar with Alyson.)<\/p>\n<p>For some of my Geography Journal entries she\u2019ll take you to each of those stops (and more!). Today she is off to Spain to taste test all that Basque Country has to offer.<\/p>\n<p>Take it from here. Escargot.\u00a0Tartlets. Anchovies, olives, marinated mushrooms \u2026 tiny, salty, addictive roasted peppers. What does one do in this self-serve nirvana? The locals appear to be grabbing the goodies willy-nilly, but surely there is a method to this madness.<\/p>\n<p>When my sister and her husband visited the Basque Country a few years ago, they were unable to sleuth out pintxo protocol. Regrettably, they moved on to the more foreign-friendly option of a sit-down, restaurant meal.<\/p>\n<p>But, in the fortunate company of my Basque-American amigos, I was expertly chaperoned through the process, which, once you\u2019ve been shown the way, is actually quite simple. Each afternoon (and all afternoon) we would hop from pub to pub, ordering mini-beers (called zuritos) and we would each select pintxos to be shared among the five of us.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3777\" title=\"geography-basque-0799\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-07991.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image wp-image-3776\" title=\"geography-basque-0727\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0727.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3778\" title=\"geography-basque-0811\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0811.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p>Some bars operated on the honor system and let you pay when you were done; while others wanted prepayment or needed to do a visual tally of what we\u2019d selected before we started inhaling them. We would typically pick five pintxos at each stop. On average, they cost about $3 per piece.<\/p>\n<p>These reasonable prices, perfect portions and our system of sharing allowed for exponentially more taste sensations than a traditional \u201cmeal.\u201d\u00a0 Consequently, I gleefully and literally traveled through the Basque Country \u2026 one blissful bite at a time.<\/p>\n<p>One of the most common pintxos, eaten at breakfast, lunch and dinner is the \u201ctortilla\u201d.<\/p>\n<h2>POTATO TORTILLA<\/h2>\n<p>MAKES: 4-6 SERVINGS<\/p>\n<p>1\u00a0\u00a0\u00a0\u00a0 pound Yukon gold or fingerling potatoes, peeled and thinly sliced<br \/>\n1 \u00a0\u00a0 \u00a0large onion, thinly sliced<br \/>\n4\u00a0\u00a0 \u00a0eggs<br \/>\nSalt and pepper to taste<br \/>\nOlive oil<\/p>\n<p style=\"text-align: center;\">Peel 1 pound of potatoes.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3849\" title=\"geography-basque-0179\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0179.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Cut in half lengthwise and slice up.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3850\" title=\"geography-basque-0183\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0183.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Thinly slice one onion.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3851\" title=\"geography-basque-0188\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0188.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Combine potato and onion in bowl and mix together.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3852\" title=\"geography-basque-0191\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0191.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">In a medium non-stick skillet, heat \u00bc inch olive oil. Fry potatoes and onions over low heat, turning occasionally with a spatula. Cook until potatoes are tender, about 30 minutes.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3853\" title=\"geography-basque-0197\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0197.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">When potatoes are done, remove from the pan and drain well.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3855\" title=\"geography-basque-0206jpg\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0206jpg.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">In a large bowl, beat 4 eggs and gently add potatoes.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3856\" title=\"geography-basque-0211\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0211.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Add the salt and pepper. Let stand 10 minutes.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3857\" title=\"geography-basque-0214\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0214.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">Clean the skillet and dry it well. Slowly heat 1 T olive oil and then add egg-potato mixture, spreading it over the bottom of the pan.\u00a0Let &#8220;tortilla&#8221; set over low heat, making sure it doesn\u2019t stick.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3858\" title=\"geography-basque-0217\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/10\/geography-basque-0217.jpg\" alt=\"\" width=\"360\" height=\"270\" \/><\/p>\n<p style=\"text-align: center;\">When the eggs are set and start to congeal on the surface, reverse the tortilla onto a large flat plate or cutting board and slide it back into the pan to cook the other side.
