In a large skillet or wok, combine peanut oil, garlic, galangal, and salt. Cook over medium heat until fragrant. Add carrots and broccoli; cook until tender-crisp.<br \/>\n2. Add chicken breast and chili paste; cook until heated through and remove from heat.<br \/>\n3. Stir in green onions, basil, cilantro, and peanuts.
