We can work together to get our heads (appetites?) around this novel notion\u2014I haven&#8217;t actually eaten crickets yet, either.<\/p>\n<p>But my mind is open, and here&#8217;s why.<\/p>\n<p>The impetus to eat insects is not merely based on curiosity or shock value. We&#8217;re talking about a much more dire motivation. As we struggle to feed this populous planet, we all know meat is\u00a0incredibly costly in terms of energy consumption and environmental impact (read more on that topic <a href=\"http:\/\/www.nytimes.com\/2008\/01\/27\/weekinreview\/27bittman.html?pagewanted=all&amp;_r=0\">here<\/a>).<\/p>\n<div id=\"attachment_42608\" style=\"width: 370px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-42608\" class=\"size-full wp-image wp-image-42608 \" alt=\"gift_gab-ento_again3\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2013\/08\/gift_gab-ento_again3.jpg\" width=\"360\" height=\"257\" \/><p id=\"caption-attachment-42608\" class=\"wp-caption-text\">Photo by Jeff Vanuga, USDA Natural Resources Conservation Service, via Wikimedia Commons<\/p><\/div>\n<p>While you know that I am not fundamentally opposed to meat farming, I do believe that it&#8217;s difficult to accomplish it\u00a0sustainably on a super-size scale.<\/p>\n<p>&#8216;Nuff said.<\/p>\n<p>This dilemma drives us to explore new frontiers of food and find alternative sources of protein.<\/p>\n<p>So, you&#8217;re wondering, why <i>crickets<\/i>? Photo courtesy of Wikimedia Commons; Fuzheado<\/p><\/div>\n<p><!--more--><\/p>\n<p>Here&#8217;s another <a href=\"http:\/\/www.utne.com\/2007-07-01\/Science-Technology\/The-Dark-Side-of-Soy.aspx#axzz2bIddl7mL\">article<\/a> that addresses the soy situation and why this popular vegetable can cause problems when used to provide protein in our diets.<\/p>\n<p>So, we find ourselves at the doorstep of <a href=\"http:\/\/www.exo.co\/index.html\">Exo<\/a>.<\/p>\n<p>Unlike Ento&#8217;s sushi-esque creations, Exo is focusing on producing protein bars with cricket flour. Specifically, each bar is made up of 20 percent roasted cricket flour and 80 percent yum (dates, cacao, almond butter, and coconut).<\/p>\n<div id=\"attachment_42611\" style=\"width: 370px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-42611\" class=\"size-full wp-image wp-image-42611 \" alt=\"gift_gab-ento_again5\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2013\/08\/gift_gab-ento_again5.jpg\" width=\"360\" height=\"240\" \/><p id=\"caption-attachment-42611\" class=\"wp-caption-text\">Photo courtesy of Exo<\/p><\/div>\n<p>&#8220;Most people say, &#8216;I can\u2019t even taste the crickets!'&#8221; says Exo co-founder Gabi Lewis. &#8220;As if they would know what it tastes like if they <em>could<\/em> taste the crickets.&#8221;<\/p>\n<p>Touch\u00e9.<\/p>\n<p>Lewis and his partner-in-protein, Greg Sweitz, tracked down an esteemed chef in the UK who signed on to render the bars scrumptious and is also working on future recipes.<\/p>\n<p>&#8220;Ultimately, we\u2019re just creating a very healthy, sustainable, and cheap protein source. We can make shakes, bread, pancakes, or baking products. And the worms, there are many different recipes for those. The little grasshoppers have a smoky flavor to them. It&#8217;s the way they cook them, and it&#8217;s really good.&#8221;<\/p>\n<p>See?<\/p>\n<p>And, hey, Exo&#8217;s protein bars are far less \u2026 ah \u2026 <i>leggy<\/i>.<\/p>\n<p>&#8220;The protein bar looks very normal. There are no insect fragments, just a finely ground power,&#8221; assures Lewis. &#8220;It\u2019s amazing how quickly people get over that initial disgust response. The company is currently working with cricket farmers in the U.S. who supply reptile food for pet owners and bait for fishing outfits, but human consumption is a whole new game.<\/p>\n<p>So far, there are no certified organic cricket producers out there.<\/p>\n<p>Now, there&#8217;s a fabulous farmgirl niche: <i>exo<\/i>-preneur!<\/p>\n<p>In the meantime, Exo is asking for your support via their <a href=\"http:\/\/www.kickstarter.com\/projects\/exoprotein\/exo-protein-bars-made-from-cricket-flour\">Kickstarter campaign<\/a>.
