{"id":48076,"date":"2014-03-26T00:09:16","date_gmt":"2014-03-26T07:09:16","guid":{"rendered":"http:\/\/www.raisingjane.org\/journal\/?p=48076"},"modified":"2014-03-26T00:09:16","modified_gmt":"2014-03-26T07:09:16","slug":"megs-berry-pie","status":"publish","type":"post","link":"https:\/\/www.raisingjane.org\/journal\/48076","title":{"rendered":"Devoured!"},"content":{"rendered":"<p>\t\t\t\tIf I have to run\u00a0errands in town, I make it a point to show up on my daughter&#8217;s doorstep at the very moment\u00a0my granddaughters are\u00a0ready to be tucked into bed so that I&#8217;m the one who gets to read them a bedtime story.<\/p>\n<p>Last week, Meg and I discussed that I&#8217;d be stopping by, so she reminded me, &#8220;Make sure you get here right at 7:15 so they\u00a0get to sleep on time.&#8221; I arrived a few minutes early, so I decided to wait in my car until the exact moment of 7:15 (my arrival often sets other things in motion besides jammies and brushing teeth:)<\/p>\n<p>I was looking down at my Blackberry when something (someone?) knocked on the door of my Jeep. I couldn&#8217;t see anyone, but then I heard two little people yelling,\u00a0&#8220;Nanny, open the door!&#8221; Stella and Mia (not in their jammies yet) were ever so excited to have me &#8230; eat bedtime pie with them (no matter that it was past their bedtime).<\/p>\n<p>As it turns out, Meg decided too-late-in-the-day to make a pie with the fresh fruit I&#8217;d sent home the day before (left over from a photo shoot). Lucas, Meg,\u00a0the two girls, and I DEVOURED most of a warm pie. The flavor was extraordinary, and it wasn&#8217;t because it was flavored with so much family love; truly, she&#8217;d built a magnificent pie. Here&#8217;s her improvised (&#8220;I didn&#8217;t have all the ingredients I usually use&#8221;) recipe that&#8217;s a keeper as is\u2014happy accident.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image aligncenter size-full wp-image-48077\" alt=\"Photo Mar 14, 5 46 54 PM\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2014\/03\/Photo-Mar-14-5-46-54-PM-e1394920682883.jpg\" width=\"500\" height=\"500\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Megan&#8217;s Berry Pie<\/strong><\/p>\n<p><strong>Simple Crust<\/strong><br \/>\n2\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0cups flour<br \/>\n1\/8\u00a0\u00a0\u00a0 \u00a0t salt<br \/>\n1\/8\u00a0\u00a0 \u00a0 t sugar<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 cup (2 sticks) cold butter<br \/>\n1\/2\u00a0\u00a0 \u00a0 cup cold water<\/p>\n<p><strong>Filling\u00a0<\/strong><br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 cup fresh blueberries<br \/>\n4\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 cups fresh strawberries, quartered<br \/>\n1\/2\u00a0\u00a0\u00a0 \u00a0cup sugar<br \/>\n3\u00a01\/2\u00a0 T cornstarch<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0T fresh lime juice<br \/>\n1\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 T salted butter, cut into small pieces<\/p>\n<p>1. Make crust: Mix dry ingredients in a medium bowl.\u00a0Working quickly to prevent softening, cut in butter with a pastry cutter or two knives. Add cold water and mix just until the dough sticks together.<br \/>\n2. Roll half the dough to fit into a 9-inch pie pan; trim the overhanging dough.<br \/>\n3. Position a rack on the lower third of your oven with another rack just beneath it. Preheat the oven to 425\u00b0F.<br \/>\n4. Combine filling ingredients and let stand for 15 minutes.<br \/>\n5. Pour filling into prepared crust and dot with the 1 T butter.<br \/>\n6. Brush the edge of the bottom crust with cold water. Roll out the remaining dough and cut into strips. Cover the pie with a lattice top.<br \/>\n7. Bake for 30 minutes. Slip a baking sheet beneath the pie on the lowest rack, reduce oven temp to 350\u00b0F, and bake 25\u201335 minutes more.<\/p>\n<p>Serve slightly warm.
