Take it away, MBA Jane!!! MJ\u00a0<\/span><\/p>\n<div>\n<p><span style=\"color: #339966;\">Wondering who I am? I\u2019m Merit Badge Awardee Jane (MBA Jane for short). In my<\/span> <a href=\"http:\/\/www.raisingjane.org\/journal\/10477\">former life<\/a> \u2026<b>\u00a0<\/b><b>\u00a0<\/b><b>\u00a0<\/b><\/p>\n<\/div>\n<p>For this week\u2019s <a href=\"http:\/\/www.farmgirlsisterhood.org\/badges-eo-greatest-generation.asp\">Each Other\/Greatest Generation Intermediate Level Merit Badge<\/a>, I was off to visit Gramma Barbie at the Sunny Oaks Retirement Home in Florida. Don\u2019t get me wrong; I wasn\u2019t just going to earn a new merit badge, I also love me some Gramma time. She\u2019s a hoot. She\u00a0promised to teach her secret family recipe for Green Bean Casserole, so I set off for Florida, my mouth watering all the way.<\/p>\n<p>The drive gave me plenty of opportunities to think up new life questions for Gramma. Sometimes you know someone so well, you don\u2019t realize what you don\u2019t know. You know? Last time I spent time with her, she almost gave me TMI, if you know what I mean. So this time, I planned to keep her on the straight and narrow, \u00a0conversationally speaking.<\/p>\n<p>Turns out, my little plan was derailed by plans of her own. The sneaky woman put me to work organizing old photographs while she gallivanted off with her friends to play bingo. Well, I admit grudgingly, this works too \u2026<\/p>\n<div id=\"attachment_52058\" style=\"width: 370px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2014\/09\/Mu\u00f1ecas_barbie_diab\u00f3lica2.jpg\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-52058\" class=\"wp-image-52058 size-full\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2014\/09\/Mu\u00f1ecas_barbie_diab\u00f3lica2.jpg\" alt=\"Mu\u00f1ecas_barbie_diab\u00f3lica2\" width=\"360\" height=\"480\" \/><\/a><p id=\"caption-attachment-52058\" class=\"wp-caption-text\">Photo by Ricardo Peralta Solis via Wikimedia Commons<\/p><\/div>\n<p>By the time Gramma got back (three hours and 20 bucks richer), I had several photo albums filled with old\u2014er, I mean to say <em>vintage\u2014<\/em>photos, and my tummy was rumbling for some casserole. I let her thumb through my masterpiece while she talked me through her secret recipe:<\/p>\n<p><strong>Green Bean Casserole <\/strong><\/p>\n<p><strong>Homemade Cream of Mushroom Soup Concentrate:<br \/>\n<\/strong>3 T unsalted butter<br \/>\n1 small shallot, minced (about \u00bc cup)<br \/>\n\u00bd\u00a0cup minced crimini mushrooms<br \/>\n2\u00bd\u00a0T all-purpose flour<br \/>\n\u00bd\u00a0cup vegetable broth<br \/>\n\u00bd cup whole milk<br \/>\n1 pinch kosher salt<br \/>\n2 pinches freshly ground black pepper<\/p>\n<p>Start by melting the butter in a pan. Add your shallots and saut\u00e9 till soft. You can add some garlic here too, if you\u2019re feeling wild and crazy and want to stay vampire free. Sprinkle in the flour and whisk. Pour in broth and milk. Let bubble and simmer for about 5 minutes. Season.<\/p>\n<p>Now it\u2019s time to use this baby for some casserole!<\/p>\n<p><strong>Green Bean Casserole:<\/strong><br \/>\n2 lbs\u00a0haricot verts (green beans)<br \/>\n1 recipe Homemade Cream of Mushroom Soup Concentrate (above)<br \/>\n\u00bd t kosher salt<br \/>\n\u00bc t coarse black pepper<br \/>\n\u00bc cup half-and-half<br \/>\n4 T unsalted butter<br \/>\n2 large shallots, peeled and sliced thin<\/p>\n<p>Preheat your oven to\u00a0350\u00b0F.<\/p>\n<p>Season a pot of boiling water with a few pinches of salt. Drop in the beans and cook for 3-4 minutes. Remove and immediately plunge the beans into icy water for a minute or two. Remove to a colander and pat dry.<\/p>\n<div id=\"attachment_52056\" style=\"width: 370px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-52056\" class=\"wp-image-52056\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2014\/09\/green-beans-Blanching.jpg\" alt=\"green-beans-Blanching\" width=\"360\" height=\"270\" \/><p id=\"caption-attachment-52056\" class=\"wp-caption-text\">Photo by Warden via Wikimedia Commons<\/p><\/div>\n<p>Add the blanched beans to a large bowl. Pour the homemade cream of mushroom soup over top. Season with kosher salt and black pepper and pour in the half-and-half.<\/p>\n<p>Toss the beans around until coated and place them into a 1\u00bd to 2-qt baking dish. Pop into your preheated oven and bake for 30-40 minutes, or until the beans are fork tender. Toss the green beans once halfway through baking.<\/p>\n<p>Meanwhile, melt the butter in a skillet. Add the sliced shallots and stir every so often until they start crisping up. Once they&#8217;ve reached a golden color {but not too deep} remove with a slotted spoon to a paper towel lined dish, where they will continue to crisp as they cool.<\/p>\n<p>With 10 minutes remaining on the clock, remove the casserole and top with the shallots. Bake for 8-10 minutes, until the shallots turn a deep golden. Watch carefully so they don&#8217;t burn.
