Take it away, MBA Jane!!! MJ\u00a0<\/span><\/p>\n<div>\n<p><span style=\"color: #339966;\">Wondering who I am? I\u2019m Merit Badge Awardee Jane (MBA Jane for short). In my<\/span> <a href=\"http:\/\/www.raisingjane.org\/journal\/10477\">former life<\/a> \u2026<b>\u00a0<\/b><b>\u00a0<\/b><b>\u00a0<\/b><\/p>\n<p>For this week\u2019s <a href=\"http:\/\/www.farmgirlsisterhood.org\/badges-fk-breadmaking.asp\">Farm Kitchen\/Bread Making Beginner Level Merit Badge<\/a>, I first had to learn the difference between two very simple, yet very ingenious, common kitchen ingredients: baking soda and baking powder. Hey, they\u2019re not just for brushing your teeth and scrubbing your cutting boards anymore, peeps.<\/p>\n<p>I\u2019m blushing to admit that A) I have never really learned the difference, and B) I have mixed them up more than once. And just a friendly helpful hint from me to you: baking powder does <em>not<\/em> a Red Devil Cake make.<\/p>\n<p>It turns out the two are amazingly similar: so similar, in fact, that you would think they are interchangeable. But alas &#8230; weeping and gnashing of teeth &#8230; negative, ghost rider.<\/p>\n<p>Although you can, in a pinch &#8230; (Get it? A pinch? A pinch of soda? HA!) &#8230;\u00a0use powder in place of soda, though you would need a larger amount. But vice versa? Just ain\u2019t true, Magoo.<\/p>\n<p>Both are basically sodium bicarbonate, but baking powder has\u00a0other ingredients as well.<\/p>\n<div id=\"attachment_54123\" style=\"width: 270px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-54123\" class=\"wp-image-54123\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2015\/01\/Royal_Baking_Powder.jpg\" alt=\"Royal_Baking_Powder\" width=\"260\" height=\"455\" \/><p id=\"caption-attachment-54123\" class=\"wp-caption-text\">Photo courtesy of Joe Mabel, Wikimedia.com.<\/p><\/div>\n<p>Here&#8217;s a great explanation from <a href=\"https:\/\/news.ncsu.edu\/2014\/05\/baking-soda-powder\/\">North Carolina State University<\/a>:<\/p>\n<p>&#8220;What\u2019s the difference between baking soda and baking powder? Short answer: acid. But it can make a big difference for baked goods, so let\u2019s explain.<\/p>\n<p>Baking soda has only one ingredient: sodium bicarbonate. Sodium bicarbonate is a base that reacts when it comes into contact with acids, like buttermilk, yogurt or vinegar. This reaction produces carbon dioxide (CO<sub><span style=\"font-size: small;\">2<\/span><\/sub>) in the form of bubbles, like a liquid foam (think of the grade school experiments involving fake volcanoes, vinegar and baking soda). When making baked goods, the process is called \u201cchemical leavening,\u201d because the trapped CO<sub><span style=\"font-size: small;\">2<\/span><\/sub> gas makes the dough or batter rise.<\/p>\n<p><a href=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2015\/01\/baking-soda-kids.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image aligncenter size-full wp-image-54969\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2015\/01\/baking-soda-kids.jpg\" alt=\"baking-soda-kids\" width=\"360\" height=\"501\" \/><\/a><\/p>\n<p>But when baking soda comes into contact with an acid, it pretty much reacts immediately. And that\u2019s a problem.<\/p>\n<p>For many baking recipes, you want an extended reaction, so that the rising doesn\u2019t take place all at once.<\/p>\n<p>Baking powder addresses this problem because it is \u201cdouble acting\u201d \u2013 it has different ingredients that create CO<sub><span style=\"font-size: small;\">2<\/span><\/sub> gas at different stages of the baking process.<\/p>\n<p>All baking powders contain sodium bicarbonate (just like baking soda). But baking powder also contains two acids.\u00a0 One of these acids is called monocalcium phosphate. Monocalcium phosphate doesn\u2019t react with the sodium bicarbonate while it\u2019s dry. But as soon as the baking powder is stirred into a wet dough or batter, the two ingredients begin to react, releasing bubbles of CO<sub><span style=\"font-size: small;\">2<\/span><\/sub> and causing chemical leavening.<\/p>\n<p>But to extend the chemical leavening process, baking powder also contains a second acid, either sodium acid pyrophosphate or sodium aluminum sulfate. Neither of these acids react with sodium bicarbonate until they are both: A) wet (i.e., stirred into the batter) and B) hot.<\/p>\n<p>In other words, sodium acid pyrophosphate and sodium aluminum sulfate won\u2019t start reacting with the sodium bicarbonate until <em>after you\u2019ve put the dough or batter in the oven<\/em>. This means that the batter rises for a longer period of time, making lots of bubbles (and a fluffier cake, muffin, or whatever).&#8221;<\/p>\n<p>Anyway, enough of the science-y stuff, gals.
