Here&#8217;s a delish recipe that&#8217;s different from all the rest.<\/p>\n<p><a href=\"http:\/\/www.raisingjane.org\/journal\/5584\/growing_jane-chicken_thighs_acorn_squash-3371-2\" rel=\"attachment wp-att-5710\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"growing_jane-chicken_thighs_acorn_squash-3371\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/11\/growing_jane-chicken_thighs_acorn_squash-33711.jpg\" alt=\"\" width=\"327\" height=\"192\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><!--more--><\/p>\n<p>CHICKEN THIGHS WITH BUTTERCUP SQUASH<\/p>\n<p>PREP TIME: 25 MINUTES<br \/>\nCOOK TIME: 1 HOUR<br \/>\nMAKES: 4 SERVINGS<\/p>\n<p>Ingredients:<\/p>\n<p>2\u00bd\u00a0\u00a0\u00a0 lbs buttercup squash, or\u00a0hard winter squash, seeded, peeled, and cut into 1\u00bd\u201d cubes<br \/>\n1\u00a0\u00a0 \u00a0\u00a0 leek, top discarded, and bottom thinly sliced*<br \/>\n1\u00bd\u00a0\u00a0 T rosemary, minced<br \/>\n1\u00a0\u00a0 \u00a0\u00a0 T orange rind<br \/>\n3\u00a0\u00a0 \u00a0\u00a0 T butter, melted<br \/>\n4\u00a0\u00a0 \u00a0 chicken thighs<br \/>\n\u00bd \u00a0\u00a0 t salt<br \/>\n\u00bc\u00a0\u00a0\u00a0 t pepper<br \/>\n1\u00a0\u00a0 \u00a0 T coconut oil<\/p>\n<p>Directions:<\/p>\n<p>1.\u00a0 Preheat oven to 400\u00b0F.<br \/>\n2. In a large bowl, combine buttercup squash, leeks, rosemary, orange rind, and melted butter. Set aside.<br \/>\n3. In a Dutch oven, heat the coconut oil over medium heat.<br \/>\n4. Once the oil is hot, sprinkle the chicken thighs with salt and pepper. Add to the Dutch oven and fry on both sides until golden brown (about 7 minutes on each side).<br \/>\n5. Pour the buttercup squash mixture over the chicken.
