Don&#8217;t forget to check back.<\/p>\n<p style=\"text-align: center;\"><!--more--><\/p>\n<div id=\"recipe-entire\" class=\"recipe-entire\">\n<p style=\"text-align: left;\">MaryJane&#8217;s Marshmallows<br \/>\nPREP TIME: 30 MINUTES<br \/>\nCOOK TIME: 25 MINUTES<br \/>\nMAKES: 36 marshmallows<\/p>\n<p>9\u00a0\u00a0 \u00a0 t MaryJane&#8217;s <a href=\"http:\/\/shop.maryjanesfarm.org\/store\/p\/65-ChillOver-174-Powder.aspx\">ChillOver Powder<\/a> (3 boxes or buy in bulk)<br \/>\n1\u00bc\u00a0 cups water, divided<br \/>\n2\u00bd\u00a0 cups sugar<br \/>\n1 \u00a0\u00a0\u00a0 cup light corn syrup<br \/>\n\u00bd\u00a0 \u00a0 t salt<br \/>\n2 \u00a0\u00a0 \u00a0T vanilla extract<br \/>\n2 \u00a0\u00a0 \u00a0egg whites<br \/>\n\u00bc \u00a0\u00a0 t cream of tartar<br \/>\npowdered sugar for dusting<\/p>\n<p style=\"text-align: left;\">1. In a small saucepan, sprinkle <a href=\"http:\/\/shop.maryjanesfarm.org\/store\/c\/37-ChillOver.aspx\">ChillOver Powder<\/a> into \u00be cup cold water. Place over medium-low heat and stir constantly, using a whisk, for only 3 minutes. Set aside. The consistency will be that of a thick paste.<br \/>\n2. In a 3-quart saucepan, blend together \u00bd cup water with the sugar, corn syrup, and salt. Bring to a slow boil.<br \/>\n3. Turn heat to medium high. Continue to cook, unstirred, until a candy thermometer inserted into the mixture reaches 240\u00b0F. (Do not overcook, or your marshmallows will be tough.) Remove from heat. Pour in ChillOver paste and whisk until dissolved. Stir in vanilla.<br \/>\n4. In the bowl of a large mixer, beat the egg whites until frothy and add cream of tartar. Beat until soft peaks form. Using a low speed, pour hot syrup slowly into beaten egg mixture. After all the syrup is added, increase to high speed and continue to beat for 15 minutes.<br \/>\n5. Spread the mixture into an 8&#8243;-square pan that has been heavily dusted with powdered sugar. Dust top. Let dry uncovered overnight.<br \/>\n6. Loosen the mixture from the pan by lifting around edges with a knife.<br \/>\n7. Turn out onto a powdered-sugar-dusted cutting board.<br \/>\n8. Dust bottom again with powdered sugar, using a handheld sifter.<br \/>\n9. Cut into squares with a large knife that has been dusted with powdered sugar.
