If you want to take a potluck item that &#8230;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"growing_jane-coconut_macaroons-1524\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2011\/12\/growing_jane-coconut_macaroons-1524.jpg\" alt=\"\" width=\"288\" height=\"432\" \/><\/p>\n<p style=\"text-align: center;\"><!--more--><\/p>\n<p style=\"text-align: left;\">&#8230; gets devoured entirely, make up a platter of these perfect gems!<\/p>\n<p>COCONUT MACAROONS<br \/>\nPREP TIME: 15 MINUTES<br \/>\nCOOK TIME: 20-25 MINUTES<br \/>\nMAKES: ABOUT 24 COOKIES<\/p>\n<p>Ingredients:<\/p>\n<p>14\u00a0\u00a0 \u00a0ozs shredded coconut (about 5 1\/3 cups)<br \/>\n2\/3\u00a0\u00a0 cup sugar<br \/>\n1\/3\u00a0\u00a0 cup flour<br \/>\n\u00bc\u00a0\u00a0 \u00a0 t salt<br \/>\n4\u00a0\u00a0 \u00a0\u00a0 egg whites<br \/>\n\u00bd\u00a0\u00a0 \u00a0 t almond extract<br \/>\n2\/3\u00a0\u00a0 cups slivered almonds (optional)<\/p>\n<p>Extras:<br \/>\nwhole almonds for the tops<br \/>\nmelted chocolate chips for coating<\/p>\n<p>Directions:<\/p>\n<p>1. Preheat oven to 325\u00b0F.<br \/>\n2. Butter two cookie sheets.<br \/>\n3. In a medium bowl, combine coconut, sugar, flour, and salt.<br \/>\n4. Mix in egg whites, almond extract, and slivered almonds (if desired), and mix well.<br \/>\n5. For round cookies, roll the coconut mixture into 1 \u00bc\u201d balls and place on cookie sheets about 2\u201d apart. For flatter cookies, drop generously sized tablespoon mounds on to cookie sheets about 2\u201d apart.<br \/>\n6. Dip macaroons face down into melted chocolate. To attach whole almonds to the tops of macaroons, use a cake decorating tube and tip to put a dab of chocolate on the top.
