This one, Rice and Eggs, is simple and straightforward. I&#8217;d never thought to combine hard-boiled eggs with rice before, topped with hollandaise sauce. Next time, I&#8217;ll put it on a bed of spinach. Or I&#8217;ll sprinkle chopped celery onto the mound of rice before I top it with the sauce.\u00a0Yum.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"growing_jane-rice_hollandaise-0111-009-jm\" src=\"http:\/\/www.raisingjane.org\/journal\/wp-content\/uploads\/2012\/01\/growing_jane-rice_hollandaise-0111-009-jm.jpg\" alt=\"\" width=\"360\" height=\"422\" \/><\/p>\n<p style=\"text-align: center;\"><!--more--><\/p>\n<p>EGGS &amp; RICE WITH HOLLANDAISE SAUCE<br \/>\nPREP TIME: 10 MINUTES<br \/>\nCOOK TIME: 30 MINUTES<br \/>\nMAKES: 4 SERVINGS<\/p>\n<p>3\u00a0\u00a0\u00a0\u00a0 cups water<br \/>\n1\u00bd\u00a0 cups jasmine rice<br \/>\n4\u00a0\u00a0\u00a0\u00a0 hard-boiled eggs, peeled and left whole<\/p>\n<p>1. In a medium pan over high heat, bring water to a boil.<br \/>\n2.\u00a0Add rice, remove from heat, cover, and let sit\u00a0for 20 minutes, or until rice is fully cooked.<br \/>\n3. Spoon hot rice into a mold or a medium bowl. Gently press the rice so that it forms to the shape of the mold or bowl.<br \/>\n4. Flip molded rice onto a plate and hollow out the center to create a nest. Place whole hard-boiled eggs in the center of the nest.<br \/>\n5. Top with Hollandaise Sauce (below).<\/p>\n<p>HOLLANDAISE SAUCE<br \/>\nPREP TIME: 5 MINUTES<br \/>\nCOOK TIME: 10 MINUTES<br \/>\nMAKES: 2\/3 CUP<\/p>\n<p>3\u00a0\u00a0 \u00a0egg yolks, slightly beaten<br \/>\n1\u00a0\u00a0 \u00a0T lemon juice<br \/>\n\u00bd\u00a0\u00a0\u00a0cup butter, melted<br \/>\nwarm water<\/p>\n<p>1. Put about 2\u201d of water in the bottom portion of a double boiler.<br \/>\n2. In the top portion of the double boiler, whisk together egg yolks and lemon juice until the mixture lightens slightly.<br \/>\n3. Place over medium heat, slowly pour in butter, and whisk until well combined.<br \/>\n4. Cook until mixture thickens, stirring constantly.
