Idaho Spuds

Potato harvest in progress. Still more to dig. I grow only a variety called Desiree. They aren’t prone to disease and they keep well into spring without sprouting. And, and, AND, they are TASTY.

    I love potatoes fixed so many ways. They are full of nutrition and mix with just about any meat or vegetable. Your harvest looks so pretty I all of the baskets!

    Yay potatoes! Potatoes go with everything. They seem to be one of the most versatile vegetables.
    ( or maybe that’s just the Irish in me….)

    Ode to the wonderful potato. Potato is one of my favorite vegetables/foods. When I was in college pretty much all I would eat was potatoes. Would buy a sack (or 2) of potatoes & boil them in a huge pot, uncut & with skins still in tact. Then, I would let them cool & store them in the refrigerator until I was ready to eat. So between school & work I would grab a potato, slice it up & make a meal of it with ketchup. When I had more time I would make: mashed potatoes; potato soup: bake stuffed potato; breakfast potatoes & potato pancakes. The meals were inexpensive, filling & pretty yummy too. And once I had an Oral Surgeon actually endorse/recommend/sanction nothing but mashed potatoes for…well, a long while:-) Not what I would consider a bad Rx!
