Today’s Recipe: Gluten-free Budget Mix Pizza Crust

GLUTEN-FREE BUDGET MIX PIZZA CRUST

PREP TIME: 15 MINUTES
COOK TIME: 25-32 MINUTES
MAKES: ONE 12” PIZZA

2 cups Budget Mix® All-Purpose Gluten-free Baking Mix, plus more for dusting
3/4 cup grated Parmesan cheese
3/4 t Italian seasoning
3/4 t granulated onion
1/4 t salt
1 1/4 cups warm water
6 t olive oil, divided
2 t honey

1. Place a pizza stone in oven and preheat oven to 425°F. Generously butter a 12” pizza pan and dust with Budget Mix; set aside.
2. In a medium bowl, combine Budget Mix, Parmesan, Italian seasoning, onion, and salt. Make a depression in the center and set aside.
3. In a small bowl, whisk water, 4 1/2 t olive oil, and honey together. Add to Budget Mix mixture and stir just until dough forms.
4. Transfer dough to prepared pizza pan, dust with Budget Mix, and press to flatten and form a crust.
5. Brush crust with remaining olive oil, and if needed, smooth out any cracks. Using a fork, make a few holes in the bottom of the crust (this will prevent air bubbles). Bake crust on the pizza stone for 10-12 minutes, until the edges are golden and the crust is cooked in the center.
6. Remove from oven, add sauce, toppings, and cheese of your choice (we used 3/4 cup pizza sauce, 2 1/2 cups mozzarella cheese, 3/4 cup sliced Italian sausage, 3/4 cup diced green peppers, and one 2.25-oz can of drained sliced black olives). Bake at 425°F until cheese is melted and bubbling (roughly 15-20 minutes, depending on toppings).

Whisk to combine.

Add water mixture to Budget Mix mixture.

Stir just until dough forms.

Transfer dough to prepared pizza pan and dust with Budget Mix.

Press to flatten and form a crust.

    This pizza looks delicious. What a perfect idea for a lunch or dinner when everyone is tired of turkey and leftovers too!

    looking forward to making this gluten free pizza. I also need to be dairy free and hope deleting the parmesan cheese won’t alter the dough. Cabot’s lactose free cheese is available at Costco and I will substitute it for the mozzarella cheese.
