      This is little Ian Magillicutty who just turned 4 months old. With the winter we’re having he’s a woolly mammoth. He’s Lacy Lou’s calf and Magnolia’s future mate. I agree about a calf shower. Great excuse for a party. You’re invited along with your feline buddies.

      They do in fact, talk. All the time. It’s just that we have trouble with the words they use:) Guess what I started doing last night, Winnie? I’m taking citrus peels from the most wondrous health-giving citrus on Earth and I’m scraping the pith off and turning them into candied rind for Christmas. The rinds themselves are so good, those silly things kept popping themselves into my mouth. I am in heaven. Chocolate and citrus. Doesn’t get much better than that. And. And, AND, I’m going to use ChillOver marmalade as filling in some Aebleskivers for Christmas day.

        Mmmm…can you share that recipe? Can it be as simple as dipping the rind into melted chocolate? And the calf is oh-so sweet…look at those lovely eyes and long eyelashes.

          No, you have to sugar it first by simmering the rinds in sugar (or honey) water for an hour or so and then you let it drip and dry for a couple of days. We published a recipe once–I’ll try to find it for you!
