SAUSAGES WITH APPLE RINGS
PREP TIME: 15 MINUTES
COOK TIME: 30 MINUTES
MAKES: 4 SERVINGS
2 T olive oil
4 sausages (about 1 lb, the type and flavor is up to you)
4 apples
1 cup sugar
1 cup water
½ head green cabbage, shredded (about 6 cups)
1. In a large skillet, heat oil over medium-high heat. Add the sausages and cook fully. Remove sausages from pan and place on a cutting board until they are cool enough to slice. Reserve the cooking oil for the cabbage.
2. Core apples and slice into rings that are about ¼” thick. In a large saucepan, combine water and sugar and bring to a simmer. Add apple rings to the saucepan and simmer until they are tender (about 5-7 minutes), stirring occasionally.
3. Meanwhile, slice the sausages and over medium heat, re-heat the skillet that the sausage was cooked in and then, add cabbage. Toss it around in the pan to evenly coat. Cook the cabbage for 2-3 minutes, or until tender-crisp.
4. Spoon cabbage onto a platter, then add cooked apple rings, and top with sliced sausage.
