Today’s Recipe: Dairy-free Whipped Topping

DAIRY-FREE WHIPPED TOPPING

PREP TIME: 10 MINUTES
COOK TIME: 6-8 MINUTES
MAKES: ABOUT 5 CUPS

3 egg whites
1/2 t cream of tartar
3/4 cup sugar
1/3 cup water
1 t MaryJane’s ChillOver Powder
1 t vanilla extract

1. Using a stand mixer fitted with whisk attachment (or an electric mixer), whip egg whites and cream of tartar into soft peaks.
2. In a small saucepan, combine sugar, water, and ChillOver Powder. Bring to a simmer over medium heat, and continue to simmer for 3 minutes, stirring occasionally.
3. With the stand mixer (or electric mixer) running at medium speed, slowly pour in sugar mixture. Increase mixer speed to high and whip into glossy peaks.
4. Mix in vanilla. Store in an airtight container in the freezer until ready to use.
